Does Anyone Remember

Chef's Blend Low Carb Flour? I know they no longer make it and I was sooooo sad when they closed down. What I wanted to know is if there is any other low carb flour to replicate it. Has anyone come up with a flour similar that can replicate white flour cup for cup and bakes and tastes like the real thing. I used to bake with Chef's Blend and you could not tell it wasn't the real thing. I wonder why they did not sell their product to someone else rather than take it off the market.

I actually used the flour, but I thought they went out of business or something. I recall they cancelled my last order with no explanation and that was a few years back.

I noticed that netrition sells dixie diner low carb flour. I couldn't access the label to read the ingredients, but it might be a thought.

Hi Nigel,

Jennifer Eloff posted some flour substitutions she uses. In fact one was as close to white flour baking she'd made. (passed the kid test)! I'm pretty sure she posted it on this forum. Maybe try searching for her? Or, you can google Maria Emmerich. She has some amazing recipes, and they are with simple ingredients. I just ordered her cookbooks. Hope this helps, a little!

Thanks snowangel. I have all of her cookbooks, so I can look it up. I confess I haven't done a lot of baking, but every now and then, I try baking something new.
