Help with Cauliflower Pizza Crust

Hi all,

I can't seem to get a crust that you can pick up and hold in your hand. The recipe I've been working with is:

1 head cauliflower grated in a food processor and then microwaved for about 8 minutes
2 cups mozzerella
1/4 cup parmesan
garlic/onion powder seasonings as needed.

Mix well, then bake at 425 for 10-15 minutes until golden. Add toppings, bake for 10 minutes more.

Thus far I've tried 1) adding 1/4 c ground flax seed, 2) squeezing out the water using cheesecloth--I really thought this would work--I got a lot of water out of it, but no dice; still soggy/floppy.

After three trials the spouse and spawn are starting to lose patience. Does anyone have a sure fire, NOT soggy recipe for cauliflower crust? (my 5 year old likes the emoticons)

My recipe is similar to yours. I bake it until the top is golden, and then flip it to bake some more, before I put on the toppings. Is that what you are doing?

So I went back and looked at your recipe after I already wrote a paragraph.

You have no eggs in your recipe. So I went and looked at Cleo's recipe and there are eggs. She uses 1 egg to 1 cup of rice cauliflower. So with your recipe I would add 2 or 3 eggs. It has to have something to bind it.

Have you tried NancyElle's thin and crispy pizza crust? It's basically shredded cheese and eggs. We love it. If you let it cool just a bit, you can pick it up - and if you like cold pizza the next day, it's very easy to pick up and eat out of hand.

Hi! Sorry. I just saw your post and thought I should weigh in on this one...

My recommendation is to ditch my old cauliflower recipe and make my chicken crust pizza instead.

It's simple: just 1 cup cooked, processed chicken breast + 1 cup mozzarella cheese. Press out into the pan and bake like a pizza crust at 425 degrees. It makes a pretty sexy deep dish pizza, too. For that, bake the crust in a spring form for a deeper, thicker crust at 375. Here's a picture of a bacon pizza I made not long ago.

I make cleo's chicken cheese crust pizza now, had to try it first, but it is our favorite now, and it is much more filling, so there is no temptation to eat more than I need!

Try it, you will be surprised!

I tried the chicken crust, and it just didn't work out well for me. It could've been operator error, lol.

We're crazy about Linda Sue's Pork Rind Pizza crust. I've made it for years. It's sturdy enough to pick up. Don't worry if you don't like pork rinds. I didn't, either. You don't taste them. They just give a good texture to the crust.

Thanks Laurie for this reminder! I have just discovered that even though I dont like the taste of pork rinds, I do like using them in things, so I am going to give this one a try!

I second the pork rind pizza crust..it works great...but I do want to try that chicken crust..the thought of it is intriguing.

We add eggs as suggested and prefer cauliflower crust to cream cheese or cheese shreds crust. I add a lot more parmesan than you put

Another delicious option is parmesan egg and ground breakfast sausage, the kind in the tube. Same usea as chicken but adds spiciness like pepperoni or sausage pizza

Almond/Flax/Parmesan Herb Pizza Crust

Recipe By :
Serving Size : 0 Preparation Time :0:00

Quick & Easy

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
Dry Ingredients:
1/4 cup almond flour
1/4 cup golden flax seed meal (organic golden flax has a milder taste than brown)
2/3 teaspoon baking powder (aluminum free)
1 teaspoon dried Italian seasoning
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 Dash cayenne pepper
1/4 teaspoon sea salt -- or to taste (decrease salt if using saltier cheeses and toppings)
Few grinds of freshly ground black pepper
4 tablespoons Parmesan cheese -- finely grated (4 to 5)
Wet Ingredients:
1 egg (or 1/4 cup egg substitute such as Egg Beaters)
1 tablespoon olive oil (a little more -- if desired)
2 tablespoons water

Makes 1 10-inch round pizza
Preheat oven to 375 degrees. Mix dry ingredients together; add wet ingredients and mix well.

Let the dough sit for about 5 minutes to thicken. Spread dough on a lightly oiled large round pizza pan or on a cookie sheet with greased parchment paper (I used Reynolds non-stick foil, lightly brushed with olive oil and pressed the dough out with a rubber spatula so it wouldn't stick). Bake for 15-20 minutes or until cooked through (check it after 15 minutes and take out if it looks and feels done). Add sauce, cheese, pre-cooked toppings and place back into the oven for 5-10 minutes to melt the cheese. If desired, run under the broiler for a few minutes to lightly brown the toppings and make the cheese bubbly (be careful not to burn it).

NOTES : 4/7/13 So far, this was the easiest crust to put together that made a great tasting pizza. I baked it on greased parchment paper with no problem. I topped it with an alfredo sauce, and if doing again, I will leave the salt out of the crust as the alfredo was quite salty.

Easy Cauliflower Recipe

Only a few ingredients (I've been making these all day today):
1 cup cooked cauliflower
1 egg
1 cup of shredded mozzarella
Mix well. Put on parchment paper lined sheet and shape any size you want.
I added 1/2 tsp. psylium husk to firm up a little.
Put garlic, Italian spices on top and bake at 450 degrees for 15 minutes.
Take out and put on toppings.
Bake again for 5-10 minutes until toppings are heated through.

I doubled this and am taking about 28 small pizzas to a party tonight....hope you like it!
