Soup and salad compliment/ grilled cheese alternative

I have been an oopsie failure and don't have access to carb quick or specialty baking ingredients but I'm looking for something yumy to serve with y home made soup and salad tonight. It would be fine on its own but looking for something extra suggestions?

Check for The Chicken Lady's cornbread recipe. It's so dang good!

Also the almond thins would be excellent with your soup and salad, or any of the one minute muffin recipes.

How about some crackers made from flax and chia seeds with spices to complement your dinner....

Super easy and inexpensive, and it fits with the lc/no frankenfoods in your ptofile

Just had an idea, had to test it. It's lunch time.
slight variation on my last suggestion
microwave 1 slice cheese about. 1 min. remove and fold over second slice of cheese, the heat from first slice is enough to melt second slice. very close to grilled cheese texture. Think I will smear a little butter before folding next time

Try Buttoni's sandwich buns- she uses cheese, cream cheese, and whey protein powder to make a really nice doughy bread. You could probably still make a grilled cheese of it!

In fact, I just whipped up a batch of her dough for tonight's supper. But instead of making the buns, I made it focaccia style (as per her original recipe) and topped with garlic powder and Parmesan cheese for garlic bread. But I bet you could make some yummy cheese toast of it, too- be prettier accompaniment than sandwiches, I'll bet.
