Boiling a whole chicken

Have you ever boiled a whole chicken for shredded meat? I just realized that I was supposed to throw my chicken in the crock pot this morning and I totally forgot. I need shredded meat for a recipe and need to get this cooked and shredded tonight. Can I boil it? For how long? Do I leave the skin on?

Sure you can, Andi! Throw it in the pot, add a bay leaf and a couple cloves of garlic and a halved onion if you want, bring it to a boil, turn down to a good simmer and let it go til tender. It'll go even faster if you cut it into pieces first though!

Then you can cook down the stock and save it too!

I leave the skin on, but you can skin it first if you don't want the extra fat in the broth.

This worked great last night! I added a handful of baby carrots, half an onion, some celery, a few black peppercorns and a couple bay leafs. I got a nice rich dark stock for the freezer too! Chicken was done in an hour and shredded wonderfully.
