Queso Recipe (without velveeta or flour) finally found one!

WOOT WOOT!

Couldn't sleep last night, so I spent hours and hours searching the internet and finally found a recipe for queso that does NOT have velveeta OR flour in it!!






Restaurant-Style Queso Blanco


Get smooth and creamy restaurant-style chile con queso at home.

Ingredients
1 Tbsp cooking oil (veggie, olive, canola - whatever you have)
1/4 cup white onion, diced
1 large jalapeno or serrano, seeds and stem removed; diced
12 oz white American cheese (I have the deli give me 3 slices on 10), shredded
4 oz Monterrey Jack cheese, shredded (optional; don't use pre-shredded)
1/4-2/3 cup cream, half-and-half, or whole milk
1 small bunch cilantro, roughly chopped

Instructions:

Heat the oil in a saute pan. Cook the onion and pepper until softened and reduce heat to medium-low.

Add the shredded cheese and 1/4 cup of the cream. Stir until mostly melted.
Add cilantro, and additional cream a little at a time until you reach desired consistency.

Notes
Yields: ~2 cups

SOOOOOOOOOOOOOO EXCITED!

I just found this, so haven't tried it, but CAN'T WAIT! lol love me some queso!

Note: in the blog, she was firm that you need to get the cheese from the deli section and make sure they cut it large enough that you can grate it.

I was out of town this weekend and unable to respond sooner. Here's a recipe I posted a few years ago on these boards. Espinaca Dip is popular at the Tex-Mex restaurants around here - if you don't want the spinach, just leave it out.

ESPINACA CON QUESO

2 tablespoons vegetable oil
1 medium onion, diced
2 tomatoes, peeled, seeded & diced*
4 ounces diced green chiles, canned
10 ounces frozen chopped spinach, thawed, drained, & squeezed dry
2 cups pepperjack cheese, shredded
8 ounces cream cheese
1 tablespoon red wine vinegar
1 cup half and half
Salt and pepper, to taste
Tortilla chips or other dippers

Heat oil in skillet over medium high heat. Add onion and cook, stirring until onion is tender. Add tomatoes and green chilies and cook 2 minutes. Pour mixture into a large mixing bowl and add spinach, pepperjack cheese, cream cheese, vinegar, half-and-half, salt and pepper. Mix well.

Spoon mixture into a lightly greased baking dish and bake at 400║F for about 30 minutes, until hot and bubbly and lightly browned on top.

Or, heat mixture on LOW in a slow cooker until hot and bubbly.

Serve with tortilla chips or LC options.

** I used 1 can Rotel tomatoes, drained, in place of the fresh tomatoes.

mmmmm this looks yummay! (well, w/o the spinach for me! ) Since I am queso nut I am tickled to have another recipe to try!

I melt butter check and American or white American cheese and add home made pico tht I tend to have on hand... Garlic tomato onion cilantro jalape˝o ... It's really simple and tasty too
