Does anyone have a queso recipe (with no velveeta or flour in it?)
 
I am a mexican food fool.

Now that I am a diabetic, I have thrown all tortillas, etc.. to the side.

But I misssssssssssssssss queso. All the recipes I have seen online are made with either flour or velveeta or both. :(

Do you have a recipe that doesn't have one of those two ingredients in it?

Couldn't sleep last night, so I spent hours and hours searching the internet and finally found a recipe for queso that does NOT have velveeta OR flour in it!!

Restaurant-Style Queso Blanco

Get smooth and creamy restaurant-style chile con queso at home.

Ingredients
1 Tbsp cooking oil (veggie, olive, canola - whatever you have)
1/4 cup white onion, diced
1 large jalapeno or serrano, seeds and stem removed; diced
12 oz white American cheese (I have the deli give me 3 slices on 10), shredded
4 oz Monterrey Jack cheese, shredded (optional; don't use pre-shredded)
1/4-2/3 cup cream, half-and-half, or whole milk
1 small bunch cilantro, roughly chopped

Instructions:

Heat the oil in a saute pan. Cook the onion and pepper until softened and reduce heat to medium-low.

Add the shredded cheese and 1/4 cup of the cream. Stir until mostly melted.
Add cilantro, and additional cream a little at a time until you reach desired consistency.

Notes
Yields: ~2 cups

How about a can of Ro-Tel and a pound of cubed chedder cheese all melted together, or a combination chedder and jack cheese. I remember making this in a chafing dish probably 40 years ago and we did not use velveeta. It would probably work in a slow cooker or gently simmered in a double boiler.

Or, you could use salsa instead or Ro-Tel in the above recipe.

I've never had any luck with getting cheddars to melt to the right consistency. Lawd knows I've tried though! :D
