Chicken in the Pressure Cooker

My new favorite way to cook chicken is in the pressure cooker. I feel so behind-the-curve because I just discovered this a couple of months ago.

Does anyone here have a good recipe for chicken in the pressure cooker? I usually marinade with a salad dressing and that's been about it. I am looking for ideas :) Will also consider other items in the pressure cooker - like I said, this is a new world for me....

I have a lot of stuff I do in the pressure cooker! Pot roast, shortribs, chili, chicken or beef stock, plenty more that aren't coming to the top of my memory bank at the moment.

Do a Google search for "pressure cooker recipes" and you'll turn up TONS of them. Many are already suitable for low-carb - most of the rest just need a little tweak to make them LC friendly.

I think there are a couple threads on here about cooking in the PC - let me see if I can turn them up.

I didn't read through all the threads, so there are likely some duplicates in there - and I also didn't link all the threads, only if they had at least half a dozen or so responses. There are others on this forum though - do an Advanced Search with "pressure cooker" in the search and do "titles only" - you'll turn up some more!
