HELP!!!Mozzarella cheese crackers

I new to sight and really looking forward to bring part of the group!! Need help already :-). The mozzarella cheese crackers with garlic question. I tried this and my cheese didn't even melt it stayed as buttons that would have burned if I went the full 1 minute. I did use the light string cheese. What going wrong ??

Welcome to the site.
Using " light cheese " is the problem. If you are low carbing NEVER use any light food, only the real thing. Light food has added sugars and who knows what added to make it taste better.
Mozzarella is also not that easy to melt, but good to fry.Beast stick with real cheese slices and shredded Parmesan.

Not always! Light cheeses often are made with skim milk or 2% milk rather than whole milk, without anything added. Of course the light cheese may not work as well in this recipe, but it isn't true that all light foods have additives.

I have no problem melting shredded mozzarella that comes in a bag. I like to get it to the browned stage for crackers but I also like to spread some low carb sauce on a plate and layer some mozzarella and pepperoni or whatever toppings you like and microwave for a few minutes, it's great for a pizza craving!

You said "buttons"- did you cut up string cheese? Use shredded cheese.

I use american cheese and cut it into squares.

I also use the already cubed cheese in the package...colby, etc.
