Pleasing those opposed in home

My husband and I have lowered our carbs drastically over the past year. I have been using coconut flour to bake. I'm allergic to nut flowers so almond flour is out. He really hates the taste of the coconut flour.

So I'm wondering about KevinPa's recipes. I'm wondering what your opinions may be on his bread and dessert recipes. I know many won't touch wheat any longer. I'm staying clear of it myself. But, to please my husband I'm wondering if an occasional treat or bread 1-2 times a week will effect his blood sugar.

If you don't have an issue with coconut flour, maybe just purchase some low-carb bread (or whatever) for him and keep it in the freezer for the occasional use?

Since I love to bake bread, I enjoyed experimenting with all of Kevinpa's flour mixes and breads. I used his simple white bread recipe with my sourdough starter and it was wonderful. My blood sugar stayed normal, no spikes with his mixes. By all means, if you like to bake and your husband doesn't have an issue with gluten, make him some of the treats in Kevin's threads.

Thank you Diana. I will try his recipes then and just have him test his blood sugar.

My main problem with grains is that I never feel satisfied and I think they set off cravings depending on what I eat. Did you ever experience that?

I didn't, but I have no problems with gluten. I just assume that the very low carb values in products like resistant starch and wheat protein isolate, etc., don't behave like carb triggers. Wonder if there is something else in them that causes cravings?

I believe it's the fast rise in insulin and then the quick drop that sets up the cravings. I think! :-)
