Low carb waffles?

I love the BTF mix but my budget cannot afford all the ingredients.

Does anyone have a good waffle recipe that does NOT have nut flours? I can use coconut flour.

I found a tasty pancake recipe with only eggs but I'm not sure how it would hold up in a waffle iron. Does anyone know what the difference would need to be in the batter?

Have you tried BettyR's waffles? We make them a few times a year and I think they are as good or better than most HC waffles. I do the version without wheat gluten. They are calorie dense though: mozzerella, cream cheese, etc.

You can freeze them and reheat in the toaster.

In lieu of syrup I heat up some frozen berries, mash them up on the stove, sprinkle in some stevia and xanthan gum and let that thicken up.

Here are the dairy-free nut-free recipes I have.
Protein Waffles Maria
1/2 cup coconut flour
1 cup JAY ROBB vanilla egg white or whey protein
1/2 tsp. Celtic sea salt
1 TBS aluminum free baking powder
1 1/2 cup unsweetened almond or coconut milk
4 eggs
4 TBS butter or coconut oil, melted
Preheat waffle iron to high. Combine the dry ingredients in a bowl. Combine the wet ingredients in another bowl. Slowly add the wet ingredients into the dry. Let sit for 5 minutes. Bake according to your waffle iron directions.
Coconut Flour Protein Waffles Wellness Mama
8 eggs
˝ cup melted butter or coconut oil
˝ cup coconut flour (plus a little more)
1 T cinnamon
1 tsp vanilla
˝ tsp salt
Crack the eggs into a medium sized bowl and beat with whisk or immersion blender. Add the melted butter or oil, cinnamon, vanilla and salt and mix well. Add the coconut flour and mix well (immersion blender is best for getting rid of clumps). Batter should be thick. If it is too thin, add a little more coconut flour. Spoon into heated and greased waffle iron and cook until light brown and firm to touch (about 3 minutes on mine). Serve with a pat of butter and some homemade strawberry syrup (heat frozen strawberries and blend) or pure maple syrup or almond butter.
Coconut Flour Waffles Hayley
1/4 cup coconut flour
4 eggs
1 tbsp. coconut milk
1 tbsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. baking soda
1/2 dropper of liquid stevia
In a medium sized mixing bowl, blend all ingredients with a hand mixer.
Drop batter into center of waffle iron to cover about 3/4 of area. This batter does not expand the way traditional flour waffles do. Waffles are done when they easily separate from the waffle iron, typically 3-5 minutes.
Coconut Flour Waffles Lisa
4 tablespoons melted butter
6 eggs
˝ teaspoon stevia glycerite
˝ teaspoon salt
˝ teaspoon baking powder
⅓ cup coconut flour
In a blender, mix the butter and eggs until combined thoroughly. Then add the stevia glycerite, salt and baking powder and mix to combine. Lastly, add the coconut flour and mix until completely combined without any lumps. Let the batter sit for at least five minutes so it can thicken.

I've made the first recipe that Soobee posted and while I liked the taste of them they were dry. I made them tonight and used pea protein in place of the protein powder and also used an extra egg and they were much better. They were thick, light and fluffy.

I made half a batch and got 5 good size waffles. I added blueberries too! Here's the measurements I used.

1/4 cup coconut flour
1/2 cup pea protein
1/4 tsp sea salt
1/2 tbsp baking powder
3/4 cup half and half
1/4 cup water
3 eggs
2 tbsp butter

Yours look yummy, Gina! Did do them in a Belgian waffle maker?

Really! Mine never come out looking as thick in my regular waffle maker. I don't have pea protein so I'll try them with regular pp and the extra egg.

If you have glucomannan powder, you can add some to make the waffle less dry.

I make a "Norwegian" type waffle. I played around with ingredients and came up with this recipe.

Oat Fibre, Protein Powder, Lupin Flour & Coconut Flour Waffles

INGREDIENTS
  • 4.5 tbsp Oat Fiber 500
  • 27 g Matrix 5.0 Simply Vanilla Protein Powder = 4tbsp (Can use any protein you like)
  • 16 g Pea Protein Isolate = 2 tbsp (if you don't have it you can just use more regular protein powder)
  • 7 g Lupin Flour = 1 tbsp (if you don't have Lupin Flour - available from Lopino or Netrition) you can use almond or coconut flour) If using Coconut flour you may need to add a little more liquid.
  • 7 g Coconut Flour = 1 tbsp
  • 106 g Simply Egg Whites (canada) = the equivalent of 2 whole large eggs
  • 1 Large Egg
  • 1/2 tsp Magic Baking Powder
  • 1/2 tsp Baking Soda
  • 12 tbsp Almond Breeze Unsweetened
  • 1/2 tsp Ground Cardamom - optional
  • Dash of salt
  • 1/4 tsp Pure Madagascar Bourban Vanilla Extract
  • 1 tsp Apple Cider Vinegar
  • 1/2 tsp Konjac Glucomannan Powder
  • 15 g melted I can't believe it's not butter (light)
  • 1 - 2 tbsp water (as needed)
DIRECTIONS

Mix dry ingredients in large bowl. Beat eggs in small bowl. Add eggs to dry and stir until fully incorporated (will be a sticky dough) Slowly add wet ingredients and stir until combined and runny batter ensues. Add melted I can't believe it's not butter last.

Heat waffle iron and spray with pam between each waffle.

Makes 5+ waffles

I made half of the first recipe as Gina did but I added 1/4tsp glucomannan powder. I used unflavored protein powder and added cinnamon and nutmeg to the batter. I got 10 waffles. I really like these waffles! They crisp up perfectly in a toaster oven, many of the lc waffle recipes that I've tried don't get crispy. This will probably be my go to waffle recipe, quick, easy and not many ingredients!

Oh, I used 1/4 cup batter per waffle.

Yes, they would be great to have extra in the freezer for a quick breakfast! They heat up well in the microwave or toaster. I love having foods that taste just as good as the high carb versions.

And they taste just like the high carb ones!

They are NOT typical american waffles though, they are softer, not quite as crunchy as eggo's. But I was trying to make Norwegian waffles and they came pretty dang close!

I have another recipe that uses raw cashews but they're expensive and messy to make and this recipe tastes better.

I don't care about crunchy waffles lol as long as they taste good that's what I care about. I love the heart shaped waffles, they're so cute!!

I made the 2nd recipe this weekend and they were very good. I'll be sticking with that recipe since it's cheaper than the BTF mix (although I love that mix!). Thank you everyone who posted.
