Easy Almond Butter Zucchini Walnut Muffins

Hi all.
This is a modification of my previous blueberry muffin recipe using zucchini and nuts in place of the walnuts. The recipe needed a few tweaks so here is the new and improved version:
1 c almond flour
1 c almond butter
3 eggs, beaten w a fork
1/2 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
3/4 c sweetener equiv
2 cups finely shredded zucchini (about 1 and 1/2 small zukes)
1/2 cup walnut pieces

Mix all except zucchini and nuts with a fork until well-blended. Fold in zukes andnuts. Pour batter into muffin tins. Bake for 25 min in 350 deg oven.

Makes 12 muffins and nutrition info for each (excluding sweeteners):
cal 246 fat 21 carb 7.2 fiber 2.5 net carb 4.7 pro 7.4

Here's a new tweak for Pumpkin Spice Nut Muffins:
Sub 1/2 c pumpkin puree for the zucchini
Sub 1 TBS pumpkin pie spice for the cinnamon.
Bake at 350 for 20 minutes (this batter is not as wet as the zucchini nut batter).

info: cal 229 fat 20 carb 6.8 fiber 2.4 net carbs 4.4 prot 8.8
