Easy Low Carb Blueberry Muffins

Have been making these almost every weekend and so good:

1 c almond flour
1 c almond butter
3 eggs, beaten w a fork
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1/2 c sweetener equiv (I use 4 tbs erythritol, 4 pkts Stevia, 4 pkts Splenda)
2 c blueberries (1 pint)

Mix all except berries with wodden spoon until well-blended. Fold in berries. Scoop batter (it is very thick) into muffin tins. Bake for 20 min in 350 deg oven.

Makes 12 muffins and nutrition info for each (excluding sweeteners):
cal 208 fat 16.8 carb 9.2 fiber 2.4 pro 7.7

They come out gorgeous and make the kitchen smell great, too!

Gabby this sounds great . I've questions.Are you using store bought almond butter?

I would like to make donuts out of this recipe . What do you think?

Yes, I used store bought almond butter. I have used two different kinds of Marathona- plain raw and toasted. The plain raw tastes better in this application to me. I think this would make a very dense but tasty cake donut. Maybe add a chocolate glaze and leave out the blueberries?

Other subs that have/might work:

1. banana nut muffins: add one small overripe mashed banana and 1/2- 1 c walnuts pieces and 1/2 tsp nutmeg in place of the blueberries ( I tried this and it was TOO good!)
2. grated carrot and carrot cake spices
3. shredded zucchini and spices

This recipe makes a really nice, very moist, slightly sweet bready texture and taste (that doesn't taste at all like almonds). I wonder if anyone else can think of interesting taste variations??
