2 biscuits with Jennifer Eloff bake mix & small bit of carbquik

Do not have a picture of this but thought I would share something.

I made just 2 biscuits for my husband and I for breakfast. They were very good.

It is actually a small version of the cheese biscuits from page 70 of the first Low-Carbing Among Friends cookbook plus a small amount of carbquik


1 large egg
1 ounce cream cheese softened
1/4 cup of Jennifer Eloff GF bake mix
tsp Parmesan cheese
1/4 tsp baking powder
1 tsp olive oil
1/8 tsp vanilla
quick shake of salt shaker (not much)
all in one bowl stir

Cheddar cheese
Carquik

Stir to mix well the first ingredient, Now add shredded cheddar cheese. Did not measure but just eyeballed it till the mix was a thickish batter.

I then took wax paper or parchment and put a scoop of carbquik and spread it out in the center. I scraped the batter in the middle of the carbquik. I lifted one side of the waxed paper and folded the entire batter in half. Now I have carbquik on the top and bottom. I could now work with the dough without it sticking to my fingers. I patted the batter into a rectangle cutting it in half. Leave this quite thick as this does not raise all that much. I have a pan that is like a muffin top pan and a put each square in two of the circles making sure I sprayed the pan. They do not stay square but takes on the roundness of the muffin top pan. I baked these till they were golden brown. These were really really just like biscuits I remember from my pre-low carb days. My husband loved them too.

Anita that is interesting. You have a talent for creating great substitution recipes. That's not even a properly scaled down version of the Cheese Biscuit recipe, so it is indeed your unique recipe! You have some awesome recipes in Low-Carbing Among Friends. People cannot believe how good you Cheese Danish recipe is, for instance. Think it is that one that received rave reveiws.

I know it isn't properly scaled but thought I should say, to be fair, that it was from that recipe since it is where I got my ideas. This particular biscuit is really good though. Many do not use carbquik much but I didn't have that much of it in this. Thanks for the compliments.

Made the cheese danishes for breakfast this morning. It still remains one of my husband's favorites.
