Happy Accidents?

Have you ever been desperate and threw something together, only to find it was delicious?

That happened to me this morning. I packed some green beans with olive oil, garlic salt, slivered almonds, and a little bit of parmesan for lunch. Lunch came around and I heated it up in the microwave. Just looking at it, though, I knew it wouldn't satisfy me. I was starving. Thankfully I keep a few emergency items in my desk, and I opened a pouch of tuna and stirred it in.

Oh. My. What?!

It was really good. I ate the green beans, but the tuna/oil/garlic/cheese mix that was left was truly delicious. It was one of those things I was sad to have end. I'm going to have to experiment a bit more with this combo:

tuna
garlic salt
olive oil
parmesan cheese
slivered almonds

The crunch of the almonds mixed with the seasoning and tuna... hello.

Has anyone else had something like this happen?

I do that all the time, based on what's in the fridge and looks good - but couldn't tell you off the top of my head what any recent combos have been!

THAT sounds good though. Love adding crunch to things with sliced almonds, or my latest craze, the sprouted pumpkin seeds at Costco. Dang those are good, love them in our salads!

For me, it was making a trail mix out of dehydrated basil leaves, spinach, sun-dried tomatoes, olive slices, peppers, mushrooms, shredded cheese and pepperoni slices. Insane but infinitely amazing and addicting. It was crunchy pizza madness and I loved every munchy moment.

Another one I'm enjoying is maple flavored cream cheese (not quite an accident, though).

1oz cream cheese
few drops liquid stevia
few drops maple flavor

I mix that up and put it on a one minute muffin half. Mmm.

That pizza combo sounds good.
