Caribbean Style Low Carb Fried Dumplings/Festival or Johnny Cakes

Wow is all I can say. I don't have pics because I ate them too fast. LOL!

Dumplings are to Caribbean folks what biscuits are to Americans. Usually eaten at breakfast but can be an addition to any meal. What we call dumplings are very different from what Americans call dumplings. They can be boiled or fried. Usually made with white flour or a combination of white flour and cornmeal. After trying for the last few years of my low carb life to make a low carb version. I think I finally have it!

I have been using a modified version of the BTF mix to make my breads/muffins etc. Yesterday I decided to try my hand at dumplings Caribbean style and while the boiled dumplings were a bust. The fried dumplings were pretty darned good!
I'm not sure if it would work with the original BTF mix, I might try it one day this week and see what results I get but I really think the Lupin flour adds to that cornmealy taste.

2 TBS Almond flour
2 TBS Lupin flour
1 TBS Egg White Powder
1 TBS Oat Fiber
1/2 tsp gluc
1.5 tsp baking powder
dash of salt
2 TBS butter -cut in small pieces and knead into flour mix

I made another batch and added 1 TBS of LC Foods Biscuit flour and they were good with that as well but it can be left out and taste just as good as written above.

Enough water to make your dough and roll into balls. (Sorry I didn't measure how much water I used, will do that when I try it next time)

Fry in hot oil. They cook quickly so keep your eyes on them. I got 5 dumplings from the above recipe.

Next time I will add some sweetener to make these into Festival.

I can't take credit for those pics. Just a random pic I found online. I wanted to show what Caribbean dumplings/festivals look like. But I am uber excited to be able to make a low carb version.
