I get a mini vacation!! The old man has to go back to Florida Sunday, and since I work nights, the kids are going to my parents, 2 hours away! Just me, kitty, puppy (6 year old Mastiff!) and no one to cook for or clean up after except myself. I'm a little excited!!

So now I'm making a menu, Sunday through Thursday, please give me some suggestions on what to try. Linda Sue's deep dish pizza is for certain!! I love shrimp, chicken, vegy's, Mexican, spicy, soup, pretty much anything!! No fancy ingredients, keep them simple.

Oh, I would love something with chicken, broccoli, and cheese. Help me please!! Am off now to the recipe room....

Hot Tamale Pie
1 lb ground beef or pork
1 extra large Egg
Shredded Cheddar Cheese
Shredded Quesadilla Cheese
Black Beans (Can use soy bb for less carbs)
Corn, Black Bean & Red Pepper Salsa (Pureed)
Mozzarella Cheese
Garlic powder
Adobe Seasoning
Crushed Red Pepper

I don't have exact amounts for this recipe. I just kind of wing it. I roughly use 1 lb ground beef, pork or a mixture of half of each.

Season the meat with garlic , crushed red and adobe seasoning. Once browned drain the oil. Mix ground meat, cheddar cheese, 1/2 can black beans, corn/red pepper/black bean salsa, all the cheddar and half the mozzarella/mexican cheese. Pour into a greased glass dish. Top with remaining cheese cook in 350 degree preheated oven about 25-30 mins
Slice and serve with a side of sour cream. This recipe, to me, tastes like a tamale.
