Jalapeno Fudge

Looking for a quick breakfast alternative, I came across this (from Deliciously-Thin)

Jalepeno Fudge
breakfast, appetizer or snack
.5 carbs per square
yeilds: 24 squares

Ingredients:

16 ounces of cheddar cheese, shredded
3 eggs, well beaten
4 fresh jalapenos, chopped (if you're a wuss - de-vein and de-seed the peppers, but I didn't think it was hot at all made as is)
salt and pepper to taste
Directions:
Put chopped peppers in bottom of a lightly buttered 9X13 pan.
Top with cheese and eggs and salt and pepper.
Bake uncovered for 30 minutes in a preheated 350 degree oven. Cut into squares and serve up delicious jalapeno fudge.

**tweaks. I usually make a recipe as is, the first time, but I was making it...and it just screamed for bacon! So I fried up some crispy and crumbled it in on the bottom with the Jalapenos I also used pickled jalapenos instead of fresh, because...well, it was easier. I let it rest a few minutes, til it stopped bubbling before cutting. DE-licious! Next time...a little more salt and pepper and some onion powder I think....

Dang that sounds good!

I'll have to call it something else though - DH expects fudge to be SWEET!

Maybe just jalapeno cheddar bake.

Yeah...the 'fudge' kindof threw me off too. Looked at it a looong time before deciding to make it. I'll go with your name...

This is right up my alley..... Plus I have jalape˝os growing in my garden, plus peppers that are much hotter than that.

I make this all the time. It's great.

For anyone who doesn't like the heat, you can use green chilies.

Some people even add in other things like black olives or onions, etc. and the beauty of it is that you can use any grated cheese you like, except probably parmesan.

I usually use colby-jack mix.

And be sure and bake it in a glass pan--that makes all the difference in the world.

To reheat, just nuke about 30 seconds...doesn't take long. It tastes okay cold too.

++note- I just mix it all up in the bowl and pour it into the pan....that bacon idea sure sounds good.

Oh, yeah, I've made this, but with green chilies. Very good, too. It was served to me at a football game gathering years ago and we really liked it.

Making some right now, but with green chiles. I'm thinking with some cayenne, topped with sour cream and crumbled bacon, this would be perfect tailgate food.

In a side note: I opened up the can of green chiles and the cats came running. Bless'em, it didn't mean what they thought it meant.
