Non-dairy creamer?

I.E. liquid Mocha Mix or any brand - can these be used like cream in making s/f puddings and so forth? I'm not allowed to have much dairy. TIA!

Doxie ---do you know what glucomannan is ?It is an all fiber root of the konjac plant. It thickens. Hit the blue word and it will describe it to you at Netrition.

I use it in my almond milk pudding.
