Shrimp Salad Sandwiches
I just saw this on Paula Deen's web page and it sounds pretty good.
1 pound cooked shrimp, peeled and de-veined
3 hard-boiled eggs, finely chopped
3 celery stalks, minced
1/2 cup mayonnaise
Dash onion salt
Salt and pepper
Toss in a food processor and pulse a few times, serve with...
8 slices your choice bread, toasted
Lettuce and tomato slices, optional
Or skip the celery in it and serve it on celery!

I think that would make a great dip! Pork rinds or veggies.
As a sandwich it sounds a bit odd to me, but probably just because I've never HAD a shrimp sandwich.
A little lime juice in it too would perk it up a bit!
Thanks for posting this - I think I'll try it as a dip and see how it comes out.

Shrimp melts are really good. The recipe minus the hb egg, add in some grated cheese and put on sour dough or LC bread. Top with more grated cheese and bake (I use a toaster oven) at 350 for about 15 minutes. Yummy.
