storing coconut and coconut flour

I have had mine in the fridge but wondering if it is necessary. I could really use that room in the fridge for something else.

So can it sit out or does it need to refrigerated?

I store all my baking flours in the freezer (they don't really freeze solid). I think it keeps them fresher. I've been keeping my unsweetened coconut in a zip-lock bag in the pantry. I should probably put that in the freezer, too, though.

Definitely leave them in either the fridge or freezer. I left some coconut flour in the pantry in a plastic container once and it went bad. It turned brown and smelled nasty.
