Bacony-Ranch Cauliflower
 
1 head of cauliflower, cut into small florets
1 Tbs. olive oil
1/4 tsp. salt
3-4 pieces of bacon
1/2 medium onion, chopped
1/2 cup of Ranch dressing
2 Tbs. cream
Chopped parsley or chives for color

Preheat oven to 425 degrees. Pam a 9 x 13 baking dish. In a medium bowl, place the cauliflower and drizzle 1 Tbs. of the olive oil over it, toss and add salt. Then place in Pammed dish in one layer, place in oven, and stir a couple of times until it is just done.This might take 18-22 minutes. Remove from oven.

Meanwhile in a Pammed or non-stick large skillet cook the bacon until crispy. Remove the bacon on paper towel and break into pieces, reserving for later.
In the bacon grease, cook the onion until soft, stirring often.

In the non-stick skillet with the bacon grease/onion, add 1/2 cup of Ranch dressing and 2 Tbs. of cream and stir until hot, not boiling.

Place cauliflower in a serving bowl and pour the hot dressing over it, tossing to coat all the pieces. Then put in the bacon pieces and toss lightly. Sprinkle chives or parsley for color and serve warm.

P.S. I did the cauliflower ahead and microwaved it in the serving dish before tossing with the sauce. :)

Mmm, sounds good, Carolyn, and I just came across a homemade DF ranch dressing recipe on Vanessa Romero's website that looks good. Note to self: Buy a couple heads of cauliflower. Man, I can't keep enough cauli in the house. :)

It is good..I just used Hidden Valley..It is gluten free, but not as good as homemade, which I will have to check out..

Sounds good, Carolyn! I roast cauliflower often with just olive oil, garlic powder, salt and pepper. I like your additions, will definitely be trying this.

I'm with you, Peggy, always needing more cauliflower! I've also been going through a lot of cole slaw mix of late.
