Very simple Almond Chicken Salad
I'm going to make this today for lunches next week.
Almond Chicken Salad
2 T lemon juice
1/2 cup mayonnaise
1 teaspoon salt
3 1/2 cups diced chicken
1 cup diced celery
1/3 cup slivered almonds
Combine lemon juice, mayonnaise and salt. Blend well. Toss with chicken, celery and almonds.
Per serving, 468 calories, 27g protein, 3g carbohydrates, 1g fiber, 2g net carbs.

I only had half enough chicken but I added a couple of hard boiled eggs and cut down the other ingredients and YUM. Try it. It's good.
