Sugar Free Syrup recipe?

I love the Davinci (sp?) syrups but would like to stay away from artificial sweeteners. I wondered if anyone has made a more natural sugar free syrup that would work on shaved ice? I just got a snow cone machine. :-)

Also, how would the flavored stevia syrups work?

I don't know about making it yourself, but Natures Flavors makes xylitol-sweetened snow cone syrups, and some that (from what I can tell) are sweetened with xylitol, erythritol and stevia. You can buy them on their website.

ETA: Netrition sells Nature's Hollow Sugar Free Syrup in maple and raspberry flavors. It is sweetened with xylitol.

I use xylitol and erythritol boiled down in a small amount of water to make an unflavored simple syrup. The less water, the more like taffy the results.

Sometime I add 2 tsp of honey while making this (2 cups of x and e, 1/2 cup water) and it turns a lovely golden amber shade and tastes astonishingly like honey!

I would try this and add some flavoring drops to make flavored syrup. If you don't want it too stiff, start with 1 cup of water to 2 cups of sweetener.

It will crystallize eventually, but a quick reheating liquifies it again.

I've got one posted on my blog that uses the following ingredients. Just boil down, strain and refrigerate. You could sub in whatever fruit flavor you'd like.

1 & 1/2c xylitol
20 drops liquid vanilla stevia
1c water
10 oz. bag frozen blackberries
1/2 lime, juiced

Flossie... thank you SO much! This is great! I'm wondering how many carbs per serving since it has blackberries. I'll have to plug it into a program and find out. Thank you so much!
