What "bread" recipe would be best to make a reuben sandwich?

I think the rest will be easy.... I can make a low carb version of 1000 island dressing... Sauerkraut will be low carb, as will the pastrami and cheese. Or in my case, roast beef, not pastrami.

I just made a loaf yesterday. It's great stuff. I'm having chicken salad on mine but I'm going to buy some pastrami today.

So, I made this and it was pretty good, but two things:

1. Mine felt almost more like a cake than bread

2. The loaf is rather small in height after cooking..... yes, I used the baking soda.

I cut it into 14 slices. I ate 2 with butter. I didn't have time to make reubens today, but will tomorrow. Overall, it is a pretty good bead substitute.

It does rise a little but it's a very dense bread. It doesn't come out like a typical yeast rye bread. It's like those very heavy German type whole meal breads. I just saw some of that type at Aldi yesterday but I'm not sure what they call it. It comes very thinly sliced and wrapped in cellophane.
