If you think okra is slimy, try this
 
I know I've posted about it before, but really, love this :)

Bag of frozen whole okra - don't thaw, just decap them
or whole fresh okra, also wash and decap
olive oil cooking spray
sea salt, coarse grind

Line a cookie sheet with parchment paper. Place the okra out in a single layer, they can be touching.
Spray with the olive oil spray, sprinkle with salt.
Roast in a 425f oven for 30 minutes, until they have started to get caramelized patches on the bottom.
Eat!
No slime, just roasted goodness :)

Just saw this recipe on pinterest (is it yours?) I cannot wait to try it.

I LOVE roasted okra, and often sprinkle mine with garam masala for an Indian twist. Really good done this way.

Oh I doubt it's original, though I've been posting about it on here for a decade lol ;)

These are my "french fry" replacement a lot of the time. I use the Heinz 1 carb ketchup with them, or 1/2 that and 1/2 mustard mixed together.

I actually like okra, especially fried! Might have to try it this way. Does the frozen taste as good as fresh? Usually I don't like frozen veggies.

Yes, they taste the same as fresh (I had fresh today!) and make sure not to thaw them first or they do get a little slimy as the water condensation gets them.

Are you sure this taste good? I've never had okra, but I'm open to try. I eat a lot of
veggies.But I've always been afraid. I'm an east coast girl.

Being from down South, made fried okra every summer.
There was no such thing in those days as frozen okra in
the markets so it had to be fresh. I didn't even know in those
days that okra was slimy. She had it dipped in flour, cornmeal and
seasonings and fried crispy in a big old black skillet. It wasn't until
I learned to make gumbo that I realized it was slimy and that very
thing thickened the gumbo so well. Also we had pickled okra which
was delicious. She also made watermelon pickles. Wonder if any
of you had those experiences?

I always figured that you had to have grown up eating okra, just like you had to have been born eating raw oysters. Luckily I did both. Now, not having ever had frozen okra, I can only speak to the fresh. Picked right off the bush, they are delectable, tender, crisp, flavorful. Stewed with tomatoes, they can be slimy, but only in the best way--slightly crunchy and sweet and luscious with the tart tomatoes.

I grew up in the Deep South. We really didn't eat okra fried in my house--it was just too good right out of the garden to add all that breading and deep fry. I would suggest that anyone interested in trying this unusual vegetable go to to a local farmer's market and buy some freshly picked that morning and gently steam them to find out what it's all about!

Sounds good, Barbo I had those experiences growing up.

I use this method with my okra before adding it to gumbos.

Yep I grew up in South Texas and we always fried it too ! Then, we decided to try to make gumbo and loved it that way too :)

Can't wait to try it this way ...

We always grew okra in our garden growing up and I love fried okra, but okra may be one of those things that is an acquired taste.

I like to put it in soups too, just to enhance the flavor.

I always add a little vinegar if I make okra and tomatoes.

Fried is definitely the best. Now, thanks to ya'll, I'll have to go and roast some. haha!! Not that I mind.

I think fresh tastes better, just my opinion, but frozen isn't that much different--I'm just spoiled by the fresh stuff.
