Low carb deviled eggs, but not boring ones?

Looking for some new ideas. I never make basic deviled eggs. I make things like SW Deviled eggs, with taco seasoning and chicken, with fresh diced jalape˝o. Another one I make has non sweet pickle relish. And I make a shredded cheese deviled egg... Yum.

So what kind of interesting deviled eggs do you make?

Mash the yolks with mayo and Chipotle Tabasco to taste.

Or, give the yolks to your dog and fill the eggs with guacamole!

My favorite is a bit of mayo, salt, pepper, dijon mustad, and just a pinch of cayenne.
My mom made just with vinegar, salt and pepper. Not bad, that's what I grew up on.
But not my fav.

This is a slight variation from the boring ones, but I love the flavor: mix the yolks with dijon mustard, mayo and top with a sliced black olive. The olive gives off just the right amount of saltiness.

Speaking of chipotle, I make hard boiled eggs that sit in a brine with whole chipotles and adobo sauce..... let sit in fridge for at least a week, and they are yummy!

Nice.... headed to Costco tonight.... will pick up eggs and avocado! That might be on the agenda for tomorrow!

I dice up sugar free bread and butter pickles. I also use a dash of Walden Farms calorie free honey mustard dressing.

I grew up with PA Dutch cooking. The general rule is just add sugar to everything!...lol.
But seriously, I loved my mom's deviled eggs and have adapted her deviled eggs to be LC. I don't use a recipe, just go by taste.

To the mashed egg yolk, I add a about a couple tablespoons of cream, three tablespoons of mayo, and about two teaspoons of yellow mustard to taste. Then I add some erythritol to my desired sweetness and beat well with a wire whisk to dissolve the E.

Lastly, top off the filled eggs with a sprinkle of nutmeg or paprika. I always make some with paprika and some with nutmeg. Nutmeg is my favorite. Mmmmmm!

I make mine Mediterranean style. I use a small can of tuna in olive oil, drained and finely minced, some finely minced celery, green onion and Kalamata olives. Mash yolks and add the above with a dollop of mayo. Garnish with a slice of Kalamata olive.

BACON!!! I don't measure, I just make a "that looks good" guess.


12 Hard boiled eggs
1/2 cup mayonnaise
1-1/2 tsp. Dijon mustard
1/4 tsp. pepper
1/3 cup crumbled cooked bacon
1/4 cup finely shredded sharp Cheddar cheese (1 oz.)

Just made 13 eggs.....

Here is what we did, partially taken from above....

13 egg yolks
1 avocado
1.5 TBS mayo
Juice of 1 lime
paprika - about 1 TBS
Chipotle powder about 1 TBS
S & P to taste

We filled the eggs, and there was some leftover filling... I will have that tonight with my ribeye, as a side. I also put a drop of Texas Pete Hot sauce on the 4 eggs I had for lunch.... my kids also each at 4 eggs, and one dropped on the floor, and my dogs got that one....

My kids both gave them a thumbs up, and they are not big avocado eaters.
