Cabushka

I was introduced to this cabbage dish when working in a Czech community nursing home years ago. It is AMAZING. The crack slaw threads just got me thinking about this! I loved it so much I asked the chef cooking there to give me a recipe. At the time it gave my gallbladder fits from the fat, but it's just what we need around this place!

Cabushka

1 head shredded cabbage
1/4 lb chopped bacon
1 tablespoon vegetable oil
1 small onion, chopped
1/4 cup chopped green bell pepper
3 tablespoons white vinegar
1/2 teaspoon salt
1 teaspoon black pepper

Blanche chopped cabbage and drain off immediately. Brown bacon over medium heat, then drain. Add vegetable oil to bacon grease in pan and heat over medium heat. Add onion and bell pepper. Saute until crisp. Add cabbage and saute to meld the flavors and soften it a bit. It tastes best with a bit of crunch left.

In a large bowl, combine the prepared cabbage, bacon, sauteed vegetable mix (with oil), vinegar, salt and pepper. Mix well and serve warm, or chill and serve later.

Yields: 10 servings.

This is HEAVENLY!!! I've seen some recipes that do half fresh cabbage mixed with a jar of sauerkraut. I've tried this as well, and it's very tasty! It gives it a nice sour taste that some people love about cabbage.

This sounds delicious. Also sounds like it would make great left-overs (which I dearly love).

This is incredible and completrly turned me on to cabbage. Before this, I only ate coleslaw! It will not disappoint.
