Making chicken sausage...cooking challenged
 
Do you think I could use canned chicken? With egg as binder? I hate ground chicken bc there are always little hard bits in it. Want to make as breakfast patties.

I wouldn't do it.
 
We grind our own chicken/turkey/pork.
Purchase a food grinder online or if you have Kitchen Aid mixer,
as we do, it is a wonderful attachment. We use it quite often.
It helps knowing what is in your ground meat!

You need a raw meat to make sausage IMHO

My husband does not like the thck grind on some of the sausage meat we buy. So I take the meat out of the casing, cook it, and then run it through the food processor.

Linda sue has a recipe for chicken cakes using canned chicken. This is what I had in mind of doing but with sausage spices...fennel, sage..
