Vanessa's 1 Minute Variation is AMAZING!!!

Vanessa, from Healthy Living How To, has a variation for the infamous 1 minute muffin that takes it from good to sublime. She is adding almond flour to the basic flax recipe.

It's so good I could just sit and cry, I'm so thrilled to have found it. Okay, so maybe that's a stretch, but it's so light compared to the original recipe, which I like a lot, also, but this is such a nice change.

I have a plastic Wonder Bread sandwich container that's in the shape of a slice of bread. They have these at Wally World, but anyway, I'm going to take this recipe, add some herbs, take out the Splenda, and nuke it in the shape of a slice of bread.

Oh, this is so good, it's probably been posted a badzillion times but it's new to me.

First thing I thought of when seeing the photo was using it for an English Muffin sub. Eggs Benedict!

please be sure the plastic container is safe to use in the microwave before you use it for that. Just because it doesn't melt doesn't mean it is microwave safe.

I just made one in my Pyrex 4-1/2" bowl. It looks just like the one in the photos. Haven't tasted it yet. Kinda can't quit staring at it.

I know I keep harping on this but PLEASE do not microwave in plastic. Plastic migrates into our food from lots of sources, but this is about the worst. It is an endocrine disruptor and can trigger diabetes. It is the worst thing for someone overweight who already has metabolic issues. Don't do this to yourselves!
