Need crock pot ideas
I have a family reunion this weekend and I am determined to stay on course. I need some ideas for a crock pot. Help!! :dunno:

I'm trying this recipe today, and it looks like it'll be delicious. I've substituted ground pork rinds for the bread crumbs. I've done that many times with meat loaf and it turns out nice and moist, with no pork rind taste.

Lazy Day {Slow Cooker} Meatballs

1 1/2 lb. ground beef
1/2 lb. ground pork or pork sausage
1/4 c. Parmesan cheese
1/4 c. breadcrumbs
3 T. fresh parsley
1 egg, beaten
2 t. minced garlic
2 T. olive oil

Sauce {homemade or jarred sauce is fine too}
28 oz. tomatoes, drained
28 oz. tomato puree
1 t. dried basil
1/4 t. crushed red pepper
1/2 t. salt

Combine meat ingredients and stir until just combined. Form into 24-30 meatballs, depending on size. In a large slow cooker, combine all sauce ingredients, then add in meatballs. Cover and cook on low for 6-7 hours.

Amazon has put a few crockpot cookbooks on their 'Free For Kindle' list in the past. I've downloaded a couple of them. Pretty easy to find on their site -- although this was a while back, they might still be on the 'free' list.

Gibbs put cut up chicken in crockpot add a jar pizza sauce, pepperroni, chopped up pepper in slices . 2 cups of shredded cheese 30 minutes before it's done.

You can put anything you want in it. I make this for company alot. Easy peasy.
I make this one too. Cut up chicken, can of green chili or jalpeonos peppers, jar of picante sauce,cheese.

This isn't pizza-ey, but it's really good, and it's only 3 ingredients! I'm pretty sure it's on the thread that Charski gave you.

Boneless chicken breast (I use 4-5)
Cream cheese (I use one 8oz brick and kinda cut it up as I add it to the crockpot)
Salsa (I usually use 1 1/2 - 2 small jars or 1 large)

Just put it all into the crockpot and your done! Cook on low 6 - 8 hours or until you can stir it and the chicken breast break up and it all comes together. You can serve with small soft tortilla shells and the family can roll them up like little burritos. Maybe have some shredded lettuce and cheese, extra salsa and even chopped olives for them to add as they wish.

This is really good and the recipe can be doubled, tripled or whatever, you can make as much as you need and so easy.

My absolute favorite is Crock Pot Italian Beef:

4 lb. rump roast (i trim the about 85% of the layer off fat off the bottom of the roast)
1 can reduced sodium beef broth
1 packet Good Seasons Italian Dressing Mix
8oz. (hot or mild-your choice) Giardiniera - drained of excess oil

Ideally put this all together the night before - Place rump roast in crock pot and pour the rest of the ingredients over the top. Cook on low from the evening until dinnertime the next day. Before serving, shred meat with 2 forks.

I eat this in a bowl topped with some mozzarella cheese and extra hot giardiniera. My family puts the beef on Turano rolls. This is a family favorite!
