Coffee Cake In A Minute

*Sorry pic is so large*
This coffee cake is just like the real thing. My recipe calls for glucomannan you can substitute this with gaur gum or arrowroot or some other thickening agent. It also calls for Protein Crunch that you can omit



1 egg
1 tablespoon heavy cream
2 tablespoons butter
1/8 teaspoon glucomannan
2 tablespoon almond flour
1/4 teaspoon baking powder
1/4 teaspoon vanilla
1/4 teaspoon lemon juice
1/2 teaspoon cinnamon
1 tablespoon protein crunch

In bullet or food processor beat egg, heavy cream and sprinkle 1/2 the glucomannan. Process for a few seconds and sprinkle remaining glucomannan, process again.
Add butter, almond flour, baking powder, vanilla, lemon juice, cinnamon,and Splenda, process again until smooth.
Add topping below

Topping
(will come out crunchy if you bake instead of microwaving)
1 tablespoon almond flour
1-2 teaspoons butter
1 teaspoon sf maple syrup
Mix above ingredients until crumbly

Place batter in a microwave, greased glass bowl. Add protein crunch and slight mix. Add topping and microwave 1-1 1/2 minutes. Topping will not be crunchy as if you were to bake it but be buttery and yummy.
When done sprinkle a little cinnamon on top

* This recipe can be made in the oven on 350o for 30 minutes. Can be doubled or tripled ect.. Topping will be crisp

I just noticed your last ingredient. What is "protein crunch"?

How much Splenda? You mention that in directions but it's not on the ingredient list.

I am thinking they are the whey protein crisps...not sure but I have them and that's what they look like...a good rice crispy alternative for a cereal additive or to add to chocolate for crispy texture like nestle crunch.

Well I don't have these "balls of protein" as Ouiz calls them, but I made this yesterday without them on top. I just topped with a bit of erythritol and cinnamon. Flavor was very nice, very filling and the texture reminded me of the old pudding cakes, moist, kinda spongy? It rose in the MW but fell somewhat as it cooled. I made it in a small Corning ramekin and ate it with a spoon, actually. I would definitely make this again. Thanks for this recipe, MM!

Maybe they have revamped the recipe since the last time I bought it--when I think crisps, it is something like rice crispies or the soy crispies in luna bars. These are dense, hard little balls of protein! If yours are different, maybe I will ask netrition for a sample (do they do that??)

Mmorris -- is the product you use the one from my post #9 (from Netrition)?

It only got 3 reviews, but they were glowing -- mentioning the 'crunch' factor.

I actually did find one other product called Protein Crunch, but it was from a low carb site where you have to sign up just to read the info on it.

I got the body crunch whey protein crunchies in chocolate...they are not overly sweet but they do add crunch to yougurt and with my coconut bark they taste similar to nestle crunch.

They are not as ouiz described above in hardness but brands may vary.

I don't think it is from your post My son purchased the Body Crunch 360 from Amazon along with glucomannan from Amazon
