I make a great faux strawberry pie...
I can't take credit for this recipe, I learned it years ago at a Weight Watchers meeting, but it's a great low carb dessert.
Take a low carb tortilla, spray it with Pam or lightly oil both sides and toast it on the middle oven rack at 375 degrees until both sides brown, flipping frequently. Watch it closely so it doesn't over brown.
When it's cool, I cover it with either whipped cream or Cool Whip, then take sliced strawberries sweetened with whatever you use for sweetener, and put on top of the whipped cream, use a pizza cutter, cut it into pie shaped wedges, and it's just delicious. By putting on the whipped cream first, it keeps the crust from getting soggy. You can also sprinkle the crust with granular sweetner and/or cinnamon before you bake it, but that's tricky, as it can shake off in the oven and burn.
You can do the entire pie for under 10 carbs, and way under 200 calories. Of course, Miss Piggy here always eats the whole thing. :o
Before low carb, I used to put sugar free vanilla pudding on the tortilla topped with bananas and Cool Whip, but too many carbs in bananas, so I don't do that any longer. If any of you eat pudding, you can use different flavors, chocolate, butterscotch, there are lots of possibilities with this crust.
It's fast, easy, and one of those things that you eat and go, ummmmmmmm....
