Savory 1 Minute Muffin Recipes

Hi All,

I was inspired to start this thread by Chaquita here on LCF as she is looking for savory versions of 1 minute muffins.

I thought it would be great if we could have a bunch of savory options in one thread. Please add any that you know of or came up with here.

I look forward to all the nommie recipes

that would be nice since she specifically wanted ones made of coconut flour and that is pretty limiting since one minute muffins are pretty much by definition flax!

WOE: Atkins OWL/NK hybrid
Paleo Blueberry Muffins Ingredients:
-1/2 cup of Coconut Flour
-4 ˝ tablespoons of Coconut Oil
-6 Organic Eggs
-4 tablespoons of milk (coconut milk, etc. or if can have dairy) or water
-1/2 teaspoon Apple Cider Vinegar
-1/2 teaspoon Baking Soda
-1/4 teaspoon Baking Powder
-1 teaspoon Cinnamon
-1/4 teaspoon sea salt
-2 tablespoons Raw Honey or Stevia (optional)
-1/2 cup of blueberries (to make it lower carb, omit them or sub with nuts)



Paleo Blueberry Muffins Directions:
Combine all wet ingredients into a large bowl
Combine all dry ingredients in a separate bowl
Mix together wet and dry ingredients
Add fruit and stir
Pour the batter into muffin pans
Bake at 400 degrees for 10-15 minutes

and then cut back on the sweetener to make it more savory. might want a pinch more salt.

I make the original flax version, leave out cinnamon & splenda. Add in a little salt, parmesan, garlic powder, whatever other spice I'm in the mood for, spread it in a loaf pan instead of mug. Slice it in half to make two squares and use for sandwich bread. Golden flax works best for this.

Thanks, I do this exact thing! Ever try it with coconut flour, though? That's ultimately what I am looking for.

I haven't, sorry. I use coconut flour sparingly and almond flour not at all because I'm on a tight budget. I get 48oz of ground flax for the price of 16oz coconut flour so I stick to what's cheap!

I find I don't like flax in sweet recipes, so I do splurge on coconut flour for pancakes.
