The absolute BEST Salad!!!!!
 
This is so easy and so good, I hope you all enjoy it.

First of all, I'm a southern woman, and there is nothing better than this southern dish of wilted lettuce, in my opinion. This is what I make almost every day for lunch, sometimes for dinner if I want something easy, it's wilted lettuce, made a bit differently.

The wilted lettuce I grew up with was from mother's garden, leaf lettuce and green onions, but I've found that it works amazingly well using iceberg lettuce, too.

First fry bacon, and pour off all about 2-3 tablespoons of drippings. To the skillet add a healthy splash of red wine vinegar, salt, a generous amount of pepper, and one packet of Splenda. It will immediately start to sizzle in the hot grease, just stir it all together, and...

This is where it is made differently from the way mother did it, which was to pour the hot grease/vinegar mixture over a bowl of lettuce and put a lid on it to wilt it.

I dump the lettuce and onion mixture into the skillet and stir until the lettuce is slightly warm and everything is coated. Then I dump it in a pretty wooden bowl, garnish with lots of the crumbled bacon, grab a glass of iced tea with an orange slice instead of lemon, and it's the best lunch ever!

The carb count is under 5 and it's SOOOOO good! :yummy:

Good with spinach, too.
I do it like your mother did, because the greens get a tiny bit less cooked.
But I'd be afraid of scarring the bowl if I did it that way with wooden. I use pyrex.
Hmmm.. I'm having sauteed spinach tonight. Maybe I'll do your recipe. :)

I didn't quite understand that, I'm heating everything in a skillet and pouring the warmed greens into a wooden bowl. It's not that hot once you do the transfer.

The greens don't really cook, it just depends on how long you leave them in the skillet. Spinach, great idea, and maybe add eggs along with the bacon.

I ate these growing up ALL the time! If I was in a hurry, I'd just scoop some bacon grease outta the canister mom kept on the stove and heat it up! lol

If you like wilted lettuce then I highly recommend you try grilled romaine, it's awesome! Don't chop up the leaves, keep it as one long romaine leaf then drizzle it with oil (bacon grease or olive oil are the ones I've tried), sprinkle with seasonings (my favorite is montreal steak seasoning) and throw it on the grill. I leave it on there until the edges are wilted, but the stiff spine of the lettuce leaf is still crunchy. SO TASTY!

I just LOVE wilted salads. My mother did them often when we grilled steaks outside.

I love grilled salad, too!
 
My son grills romaine, drizzling with olive oil, as evas does, then he takes it off the grill and drizzles it with balsalmic vinegar and grates shards of parmesan on it. It's so good! I'll be sure and tell him about the montreal steak seasoning trick.

This is such an awesome way to get lots of veggies in too- I like to steam some bite-size asparagus and broccoli and stir that in with the lettuce, saute some onion and garlic... Yum. It is delicious. I just use a little drizzle of the grease, then a splash of good vinegar. I dont like salads sweet or wet.

I love these salads. I sometimes saute a couple cloves of garlic and a chopped habanero into it. So good!

I love wilted lettuce! It confuses my beloved....he looks at me as though I may be clinically insane when I dress my salads early so that they can collapse a wee bit:)

I've never tried the bacon thing, but the thought of it is making me swoon.

We only ever had wilted lettuce on very, very special occasions when I was
growing up. And I don't think I've ever made it for myself as an adult. I might
need to remedy that situation!

I mean, if I did it the way I and your mother did it, I would not use a wooden bowl. Since you are transferring to the bowl and not pouring screaming hot grease into it, your wooden bowl won't be harmed.

And I could be wrong, maybe straight hot grease wouldn't hurt it and I'm just being paranoid. My wooden bowls are one of my treasures because they were handed down from a favorite aunt.
