What to do with pulled pork?
I bought this Hillshire Farms hickory smoked pulled pork tub because it was on sale. It is just OK. Would not buy it again. Anyway, how can I use this?? I am not even sure why I bought it. DUH!

Something I've done a few times with pulled pork is make up some coleslaw or even better, broccolli slaw and spread the pulled pork over it instead of making a sandwich and for me this does the trick to fill me up and forget about the bun:)

I had some leftover this week that we had smoked.I made enchlida pork out of it. It was good and low carb.HTH.

Put it in an omelette with some white cheese and BBQ sauce.

I like pulled pork rolled in a low carb tortilla, a little LC BBQ sauce, and sour cream....plus a sprinkle of cheese. Yummy!

When I do pulled pork I use the leftovers to top my fried eggs, salads or I sometimes use it to make a southwest veggie soup.

The other thing we like to do with leftover pulled pork, if it's not too highly seasoned with BBQ flavors - make machaca. Sauté some diced onions in bacon fat or other oil you prefer - once translucent, add in the pork and a can of Ortega diced green chiles. Fry up a bit til the pork is hot and browning just a tad. Now stir in beaten eggs - the amount depends on how many people you're serving - and just scramble it all together. When the eggs are nearly set to your liking, add some shredded extra-sharp cheddar or pepperjack, gently combine til cheese melted. This is one of DH's favorite breakfast dishes!

Oh that sounds good Charski - I have a container of that pulled pork too (scored a free coupon for it) and am not impressed with it. It will be tomorrow's breakfast!
