I developed this wrap recipe ages ago, but changed it a wee bit today, I reduced the flax, added some oat fiber, reduced heavy cream and added a bit of water. The changes were to improve texture and lower carbs a bit. We were both quite pleased with the chicken quesadillas I made with them today. I just took two and grilled them with some leftover baked shredded chicken, some M-Jack cheese and chimichurri sauce in side. Mmmm Mmmm Mmmm. They were so good! I originally modified the Sherrielee Tortilla Wrap recipe on Linda Genaw’s website to come up with my version. It’s quite tasty and remarkably like a flour tortilla in texture and flavor! These will make roasted chicken shawarma sandwiches that you can actually pick up and eat without a fork! And no flax taste either! Thin enough, too! You will get eight 7″ tortillas/wraps from this recipe.

After several experiments, I have found the easiest method of cooking these is to use a non-sided flat cake plate I have. I rinse and lightly re-oil the plate between each wrap/tortilla. Here’s a pic of the cake plate I use, but any platter large enough to rotate in your microwave will do :

In my non-wheat world, these make a pretty decent substitute for Indian Naan Bread, too. Some variations I’ve tried there: a sprinkle of ground cardamom or garam masala, a bit of toasted onion bits, some cottage cheese, chopped cilantro and nigella seeds! I own a grilling skillet with holes in it that is non-stick and I plan on trying to smoke these over a charcoal fire one of these days, too. That way they’d taste even more like tandoori baked naan! These are not acceptable until the grains rung of Atkins Phase 2 OWL.

INGREDIENTS:

8 oz. cream cheese, softened
3 eggs
1/3 c. unsweetened, unflavored whey protein
3 T. oat flour (I grind rolled oats in my food processor very fine)
2 T. flax meal
1 T. oat fiber
1/8 tsp. onion powder
1 tsp. baking powder
2 T. heavy cream
2 T. water (1 T. more if your batter is too thick to spread thin)

DIRECTIONS: In a medium bowl, beat the cream cheese with a wooden spoon until smooth. Add eggs and beat with immersion or electric hand mixer until smooth as possible. Add remaining ingredients and beat well. The mixture will be about like pancake batter. Lightly oil your flat plate. Using a 1/4 c. measuring cup, scoop the batter onto the paper, spreading with a rubber spatula to about 7″ diameter. My cake plate has concentric decorations that make this much easier. Microwave on HI for 70 seconds or until dry to the touch int he center. Remove and gently fun a thin metal spatula under the edges to loosen. Lift off plate with your hands and place on paper towels. Tip: next time you buy four tortillas that have plastic separators, don’t throw them away! I save them as they are wonderful for such uses. Make the remaining tortillas (you should get 8 total) in a similar manner, rinsing batter residue off plate and re-oiling it between each baking. Use a paper towel or plastic sheet between them as you stack them to finish cooling. this will prevent them from sticking together.

Optional, you can slightly brown these a bit on both sides (as in my picture) in a dry non-stick skillet over medium-high heat. I prefer them browned myself. This step enhances both appearance, flavor and handle-ability, but is not absolutely necessary if you’re in a hurry to eat. :)

14.5 g fat
4.55 g carbs, 1.39 g fiber, 3.16 NET CARBS
8.41 g protein
120 mg sodium
177 mg potassium
23% RDA Vitamin A, 17% B12, 13% iron, 23% phosphorous, 16% riboflavin, 16% selenium

Those photos are so drool-worthy. I can't believe how much I miss Mexican food. It used to be our Friday-night go-to meal. Has anyone ever been able to low-carb refried beans? lol.

Oh, thanks so much you guys. Ya know, Barb, sometimes I can go for a whole week with no new recipe ideas, and then I'll get 3 or 4 all at once, and the creativity is often triggered off by LEFTOVERS, of all things! I like to use them up in 2 days, max. Hubby calls me the queen of leftovers. LOL Say, I know it's OT but he went to the doc today and he's lost 15 more # since his last visit 6 months ago!......and he's not even trying, not really low-carbing 100%, but eats my main courses and sides. He actually said the tortillas in these were so good I could make them for BOTH of us from now on. And he's rarely willing to eat my low-carb breads and still goes to the bakery for bread every week. Hopefully, I can convince him to try my new GF-GrF Focaccia bread, because it's just as good as these are. I'm keeping my fingers crossed there. He is T2 and needs to be eating my breads. But I'll take what he's willing to do on this adventure. I'm just glad what he's willing to eat LC is shall we say "growing". :)

I hope that method of cooking will work for you, Dee. I learned the year I first developed these the batter is wet enough, parchment tends to ripple under these making them hard to remove and ill-shaped. I messed up my first one as I recall. That's why I transitioned to using an oiled plate. A silicone-lined sheet pan or really good non-stick pan (that you also oil in case it's like mine and not so "non-stick" LOL) should work OK.

Thanks, Jen. I developed this way back when I'd only been LC'ing a year. At that time, I hadn't yet learned about the wonders of oat fiber. I alway thought after I discovered OF that a little would really improved these and it did. I just love what oat fiber does to baked goods! The other changes were just to keep wet/dry ingredients in balance.

Refried Beans Charski
1 can of black soy beans.
1/3 cup lard or bacon fat
¼ cup chopped onion
Salt
Cumin
Chile powder
In a skillet, melt lard or bacon fat. Add onion to it. Saute until onion is very soft. Add the beans and sauté. Use a potato masher or fork to smoosh the beans and onions into a paste.
Refried Black Soy Beans Lisa
2 15-oz cans Eden Organic Black Soy Beans
6 slices bacon, cut into small pieces
1 tablespoon extra-virgin olive oil
1 teaspoon salt
1 tablespoon garlic, minced
1 tablespoon chili powder
2 tablespoons unsweetened coconut or almond milk
In a large skillet, cook bacon until just done, not crispy. Leave in skillet and set aside. Drain 2 cans of black soy beans. Put into a blender or food processor and mix until smooth. Add remaining ingredients and mix until well blend. Add bean mixture to bacon and cook until warmed throughout.
Refried Beans DJFoodie
2 tbsp. light oil
1 small onion, diced
4 each garlic cloves, minced
1 tsp. cumin seed, ground
1 tsp. coriander seed, ground
1 (15-ounce) can black soy beans, drained and washed
1 small red bell pepper, seeded and diced
1 each jalepeno chillies, seeds removed and finely diced
1/4 cup vegetable stock
1 tbsp. lime juice, freshly squeezed
salt and fresh cracked pepper, to taste
In a medium sized sauce pan, heat your oil. When the oil begins to ripple, add your garlic and onions. Adding a little salt will pull the water out, and they'll cook faster (plus it tastes better!). Add your spices. Cook for a few minutes. I personally like to add some nice brown color to my onions, but it's not required. While the onions are cooking, drain and rinse your beans. Wash them well. Add your beans, bell pepper and jalapeño to the pan. Add some salt and pepper. Stir. Add your stock and lime juice. Cover the pan with a lid and reduce the heat to very low. Let the beans simmer for about 30 minutes. Mash with a fork or any other mashing tool. Beat with an electric mixer. I personally used a food mill (ricer), which gives a nice texture to the whole thing.
