Cereal Hot or Cold & Quick EZ Almond Milk

Sometimes I miss a good hot cereal or cold for a warm day snack.
I made this one up yesterday and think it tastes very good.
Warmed up some LC milk to hot and just poured it over my 1/2 c.
'cereal' mix. It was hot and thick and yummy.
Also tried it with my version of 'almond milk'

*Barbo's LC High Fiber Cereal

1 c. organic coconut flour
1 c. organic coconut flakes
1 c. golden Flax Meal (Bob's RedMill Organic)
1 c. organic gluten free quick oats (Bob's Red Mill) OPTIONAL
1 c. Vanilla Protein Powder (Jay Robb)
1 c. toasted, chopped pecans
1 c. sunflower seeds (raw or toasted)
1/2 c. Truvia or your choice to taste
1/2 tsp. salt
1 tsp. ground cinnamon

Mix well and place in containers for the freezer.
I used quart glass Mason Jars. Leave and inch at the top

Hot Cereal:
Heat 3/4 c. of LC milk or almond or coconut
Place 1/3-1/2 c. cereal into bowl
Pour hot milk over cereal and stir.

Barbo's Quick Almond Milk
1 quart of vanilla sugar free almond milk
Sweeten to taste with sugar substitute
Add one tsp. of vanilla and shake well.
Refrigerate until very cold. Drink or use for hot cereal.

*I am thinking of making this into protein bars.
