Flour replacement for pancake recipes
 
1 cup ground walnuts
1/2 cup oat fiber
1/2 cup ground almonds
1/2 cup coconut flour
1/2 cup protein powder
1 cup of another flour, depending on your carb level. I have used a combo Carbquik, buckwheat flour, oat flour & whole wheat flour. This is a good way of getting rid of some high carb flours in small quantities.

Mix & use like flour in any of your old fashioned (high carb) pancake recipes. The flavor comes from the walnuts, protein powder & coconut flour. The results are very reliable.

This looks good :) I avoid wheat, so I'd probably use oat fiber and almond flour. What are the texture of these like?

Also, I don't have a go-to pancake recipe. Would you happen to have one you'd be willing to share please?

I use my food processor to chop the walnuts so the texture is course but I like it that way. I have always used Betty Crocker's pancake recipe http://http://recipeland.com/recipe/...Pancakes-50121
You may want to adjust the liquid. I use almond milk instead of milk with a bit of liquid stevia to replace the sugar.

Thanks, Heidi :) I would probably use almond milk too. I'm not into all the sugars in regular milk. Lol!
