Does anyone have a recipe for popsicles that are not ROCK hard?
I'd like to make some that have a better texture than just flavored ice cubes.
no, buy if you are experimenting, try both a gun (glucomannan, guar, or xanthan) and a sugar alcohol (erythritol or xylitol.) clearly flavored water is not going to do it! good luck.
oh, I would suggest looking for sorbet recipes rather than popsicles. the fact that you can agitate the stuff several times as it freezes probably helps a lot.
I have lots of popsicle recipes, but they all freeze hard. I haven't tried the avocado fudgecicle recipes yet. They may do better with all that healthy fat. I usually make the 1/2 sugar free syrup, 1/2 heavy cream. I use Monin peach. Delicious and hard as a rock!
STRAWBERRY CREAM POPS
THIS RECIPE CAME FROM *MARIA'S NUTRITIONAL COOKBOOK,
"NUTRITIOUS AND DELICIOUS' BY MARIA EMMERICH
I HAD TO TWEAK TO USE THE INGREDIENTS ON HAND.
THESE ARE SO GOOD THAT THEY NEED A RED LIGHT! ;)
STRAWBERRY CREAM POPS
125 calories, 4.8 carbs, 1.1 gram fiber
2 c. thinly sliced fresh strawberries, set aside
8 oz. cream cheese, softened
*3 tbs. cream
*1 tbs. strawberry sf syrup
*Powdered erythritol started with 1/4 c. added to taste
8 popsicle molds, 8 popsicle sticks.
In a bowl mix cream cheese, sugar sub. syrup, and cream.
Mix well, taste and add more sugar sub if needed
Fold in the sliced fresh strawberries. Pour into 8
popsicle molds, add the sticks. It took mine about 4 hours to freeze. I just ran a tiny bit of water over mine and it popped
right out of the mold.

1 small box sugar-free strawberry jello
1 tub crystal lite lemonade
2 cups boiling water
2 cups cold water
Dissolve the jello in the boiling water. Dissolve the crystal lite in the cold water. Mix everything together. Pour into popsicle molds and freeze.
*These made pretty great treats late last summer. I didn't get around to experimenting much and figuring out what made the texture so much better than just freezing juice. Must be the gelatin? Source of recipe is somewhere on the internet but I didn't write it down at the time.
