Mother's Day Menus (and recipes if you like!)

So what is everyone doing for Mother's Day?

My Mom requested prosciutto-wrapped scallops, my special Dreamfields mac 'n cheese, and a spinach salad with bacon bits, carrot shreds, and the very low-cal/carb dressing I get from our local Japanese restaurant. I may make Peggy's (Buttoni) Meyer lemon pound cake, if I have time.

What are you going to be serving/eating, and include recipes if you like!

Hi Char

Mother's Day was always so lovely. I had a mother and a mother-in-law
whom I adored. I loved making them luncheons on their special day.
All of our progeny live in other states and they send cards,
flowers, or whatever. They always telephone which is nice.

Now our mom's are gone and I don't have them to fuss over.
What I do is just have a leisurely day and cook something that I
made for them.
If you still have your mom's or mom-in-laws, please enjoy being with
them and making a nice feast. They will appreciate it.

Cream of Mushroom Soup
Chicken with Dumplings and Veggies
Home Made Yeast Rolls with Butter
Variety of Olives, Pickles, Artichoke Hearts
Strawberry Shortcake with Whipped Cream
Coffee or Tea
Chocolates

Other than the yeast rolls, I make everything low carb.
We just skip the rolls.

All of my moms are gone but DH and I are having steak , salad, strawberry shortcake.

I am having my mom and dad, mother-in-law, and married daughter on Sunday. We are grilling steaks, potato wedges, salad, and homemade ice cream.

DH and I are having surf & turf! Filet's and lobster tails. I havent decided on the sides yet and I may make the lemon pound cake or a cheesecake, havent decided. I am so happy that DH is grilling surf & turf, it's my fave!

My Mom is always asking me to make potato salad for her(I do all of the cooking because she has Alzheimer's) I feel bad that I tell her no most of the time. I hate to make it because I can't eat it. Anyway, I am definitely making that for her and probably will grill some type of meat. It really just depends on what she would like. Also making a LC coconut cream cake. That's for me

cfine, my Mom asks for it too - I just go to the deli and buy a small container for her. That way - I don't get into it!

A lot of the in-store delis now have multiple flavors too - German, HB egg, "old fashioned" and others. The one she's liked best so far is from the WalMart deli!

O make her the potato salad and you can give it to her all week. And make you some LC tater salad. My MIL had Alzheimer's also and I use to make her grits ( cause I loved her) and I would make anything she use to love. Happy Mothers Day too your MOM.

No Moms here anymore either. I miss them, Mom and MIL. Going to DB's for brunch, I think I'm going to make lemon poppy seed muffins.

Well, I just quite suddenly asked my husband to invite his family over for brunch. I may be losing my mind!

Let's see, there will be 3 low carbers, 3 carb eaters and 1 carb eater vegetarian. I'm thinking a crustless quiche or frittata with veggies and cheese, bacon or sausage - maybe both, fruit salad, coffee, juice, and I may make french toast or pancakes to make my hubby happy.

What else should I add? BTW, I'm on a limited budget here.

Mother’s day is bitter-sweet for me. My second baby died when he was one day old on Mother’s day, and just a few years later, the last time I spoke with my own mother was on Mother’s day--she died several days later without regaining consciousness.

On the sweet side, I have three wonderful grown children, their spouses, and four delightful grandkids. They all celebrate Mother’s day by making a feast and honoring me and all of the other mothers in our large and unwieldy gang, including the spouses’ mothers, any exes, and even extra honorary grannies.

As for food? The guys won’t let the mothers cook. They make mountains of food, and I always get all the low-carb goodies I can eat!

So that is what I am not making for Mother’s day.

I'm going to see The Great Gatsby with my DD, DS, SIL and cousin tomorrow. You can order food and drinks while watching the movie so we will be eating (and drinking)there. After we will go back to my place for dessert and coffee, I'm making a coconut cream pie!! Just us girls, it should be a good time!

I decided to make the black bean cake, it's so dang easy - and everyone loves it. I'll make that Meyer lemon cake another time.

DH requested that I glaze the chocolate cake with SF raspberry jam and serve with whipped cream. Works for me!

I'm cooking because it's just my son and me. I am going to make roast rack of lamb, rutabaga au gratin and asparagus. For dessert, I bought that So Delicious non-dairy ice cream made with coconut milk/cream and sweetened with stevia. in mint chip!

I tasted the ice cream tonight and it is sensational!

I'm lucky to still have my mom around and we moved her in with us almost 2 years ago. She'll be 92 in early August. Foodwise, we're having rotisserie chicken, a cauliflower bake and probably asparagus. I made CarolynF's Easy Strawberry Pie for the first time tonight so that's dessert. It smelled wonderful. I'll probably whip some hwc for a topping. Since I don't have room for a pie plate in the fridge right now, I put it in a 1.5 qt. Corning French White casserole dish so hopefully it'll be fine. Can't wait!

This sounds SO good. Could you tell me how many carbs are in it? I'm still hoping for a very, very low carb ice cream.
