Has anyone made guacamole with 1/2 zucchini?
It sounds awful but the recipe comments (weight watchers) say it's great.
Whatever your favorite guacamole recipe is, you use 1/2 the avocado you normally would and you sub out 1 zucchini for each avocado for the other 1/2.
Dice and steam the zucchini until soft, then drain really well and squeeze out any water, you want it dry as possible.
Mix with the avocado and proceed to season as normal.
I don't care about the cals or fat because avocado is so good for you, but I was thinking this would be a nice trick when avocados as off season and very expensive.
