Chewy Peanut Butter Bars
I made some yummy peanut butter bars and wanted to share the recipe. I know a lot of you don't use Poly-D but for those who do these are really good bars, IMHO.
Cathy's Chewy Peanut Butter Bars (5.8 net carbs each)
1 1/2 cups Kevin's C-Q bake mix
1 cup Poly-D
1 Tb. oat fiber
1/3 cup peanut butter powder
1 tsp. baking powder
1/2 tsp. cinnamon, optional
Mix well in a small bowl, set aside.
1/2 cup peanut butter
6 drops Loran peanut butter flavor oil
1/2 cup Xylitol
1/4 cup Diabetisweet (or Erythritol)
12 drops EZ-Sweetz
1/2 tsp. Splenda Quick-Pack
1 tsp. blackstrap molasses
1 tsp. vanilla extract
1/2 cup unsweetened vanilla almond breeze
Preheat oven to 325.
In a large mixing bowl, beat together peanut butter, Loran oil, Xylitol, Diabetisweet (or Erythritol), EZ-Sweetz, Splenda QP, molasses and vanilla, mix well. Add eggs, one at a time, beating well after each addition.
Add the dry ingredients to the wet ingredients and mix well. Add almond milk slowly to get desired consistency (should be cake-like batter, not too thick or too thin). Pour into 9x9 or 10x9 baking pan, bake for 30 minutes, checking after 20 minutes, till toothpick inserted in middle comes out clean. Cool on wire rack. Cut into12 servings.
Optional: Frost with Peanut Butter Frosting - I used a package of Carb Counters vanilla frosting mixed with 1 stick of butter, 4 Tb. cold water and about 1/4 cup of peanut butter. This adds 1.7 carbs to each serving.

I've been sitting here trying to figure out how I was going to change the mix. Jen's G/F mix will work. Yay . These look so pretty Tweaker. Yum.
