Dairy Free/ Low Carb Ice Cream Recipe?

I tried a coconut milk ice cream that didn't turn out very well. I've been searching a gazillion recipes and now I'm overwhelmed. I don't have a lot of money to waste on bad tasting recipes.

Does anyone have a 5 star dairy free low carb recipe? I have a small ice cream maker.

Grammy I've never made this in a ice cream machine. I make yogurt ice cream from cashews nuts and coconut milk. Here is my recipe.
I use my yogurt for ice cream and sauces and I can cook with it in recipes using yogurt.

How wonderful! I miss yogurt, too. Thank you so very much!

I read in some of the posts after your yogurt recipe that you were going to try and make the ice cream only out of coconut milk? Did you find a recipe that worked?

I also wondered if you found an alternative for cheese and sour cream? I can't eat dairy but there are so many recipes with dairy for low carb. It really limits my choices.

Grammy my alternative for cheese .......I haven't tried it yet. I will soon because one looks like a cream cheese replacement. Sour cream I have not found a replacement.

I have to change a lot of recipes because I'm allergic to many things.
You also want to check out The Spunky coconut blog. She has children who are allergic to dairy and she has some good recipes.

For the cheese you have to get Nutritional yeast flakes to make it. I just got some so I will be checking it out. I want some cheese cake. I make a yogurt pie that is delish.

Grammy when a recipe ask for cream I often use coconut milk or almond milk with xanthan gum to thicken.

thanks for the links! I don't do dairy, either. I've tried to make yogurt from packaged almond milk. but can't get it to work. Hmmmmm, do you know WHY using packaged almond milk doesn't work?

I don't know why it doesn't work but it doesn't.I'm thinking there is not enough fat. When you make the cashew milk it seems to be thicker. Check out the yogurt thread it is so great. I make it for 3 days in a row. Then I have yogurt for about a month. Love it. I'm learning more everyday how to make things without dairy.

Regarding those nutritional yeast flakes. Some of the Whole Foods stores have it in the bulk bin area (call ahead) so you could just get a little to try instead of a big jar/container of it.

If anyone is looking for a non-dairy cheese sauce, try doing a Google search for "PPK cashew queso". It's really good though too high in carbs for someone doing Atkins style induction.

The book Artisan Vegan Cheese also has some great recipes that use cashews or non-dairy yogurt as a base. It even has a recipe for making cashew yogurt.

someone suggested making instant pudding with almond milk...it doesn't set so the froze it in popsicle molds and it tastes like a pudding pop'''I haven't tried yet but I am going to when it gets warmer. I suppose you could freeze it in anything the size of the seving you want and whiz it up in blender for soft serve maybe?

I tried to make yogurt with the carton of coconut milk and it did not work.

My favorite way is 1/2 canned coconut milk and 1/2 cashew milk. I love the flavor.
