Black soy bean hummus

I like hummus and decided to try it with black soy beans (Eden from Netrition).
It turned out really good so I thought I would share.

1 can black soy beans, drained and rinsed
1/4 c Tahini
1/4 c lemon juice
3 cloves garlic, crushed
1/2 tsp salt
1/2 tsp red pepper flakes
1/4 c coconut oil
1/4 c olive oil
1 1/2 tsp cumin
2-3 T chopped parsley.
Put all in a food processor and blend until very smooth.

I am hoping that it will get even better as it sits. Hope you enjoy!

That sounds delicious! I don't eat unfermented soy, but I'm gonna try this with a can of white Northern beans. I bet it will be just as good!

THANKS! I love hummus, most any kind. Trader Joe's makes a white bean hummus with pesto and pine nuts on top. We it!

you can get that great tahini/sesame flavor with even fewer carbs by substituting all or part sesame oil for the tahini, too.

Took it out of the refrigerator and realized that using coconut oil wasn't the best idea - turned solid. I can still use it but will have to let it sit out before eating.

LOL! I've made that mistake with homemade mayo!

OK, note to self - substitute something else for the coconut oil......
