I think when they say "Good mayo" it is code words to use a regular mayonaise, and not what is often called "salad dressing mayonaise" like Miracle Whip (they cant use brand names on TV or in cook books).

Miracle whip or other brands of "salad dressing mayo" has a different flavor profile (more sweet and tangy) and doesnt work well in many recipes.

For other things, eg use a "good cheddar cheese"... I'm assuming she doesnt want a block of proccessed Kraft cheese to be used, because the flavor and cooking characteristics wont be the same as the artisanal white sharp cheddar she is using.
