Get a celery root
cut it into slices (like french fries)
2 tbsp olive oil
i sprinkled garlic, chopped onion, cayenne pepper, and italian spices

baked for 30 minutes tuning every 10 minutes.

it turned out amazing and very potato like!

Try it and let me know how you like it!!

I love celery root, makes awesome fries and hashbrowns. Try them in the cheese rounds recipe. I sub the almond flour with a cup of grated celery root. I sautee it a bit first before adding it to the mixture.

Celery Root is one of my favorites. Even just peeled, cut into chunks, boiled, and then mashed with HWC and butter (and salt and pepper). Tastes even better than mashed potatoes. The salt, though, is key; otherwise, to me anyway, they taste sweet. I've heard that they are great mashed with cauliflower, but have never tried that.

Makes an awesome gratin, too, if peeled and sliced.

Peeling is a bit of a pain, though, and they are hard to find except in fall and winter.

I love celery root. I usually use it in soups or eat it raw. Your fries recipe looks really yummy. I am going to try it very soon. Thank you for sharing :)
