I'm bored...it was super windy yesterday so I stayed in and made it laundry day. Then my brain started moving. Oh no! Here's some ideas for so e new FOOD!
Chunky Italian salad- big cubes of provolone, black olives, ham, salami, tomatoe, onion, with italian dressing or make you own wil olive oil, red wine vinegar & spices
Cuban chunky salad- pulled pork, swiss cheese chunks,, pickles, ham chunks with a mustard vinagertte
Chicken bacon BLT salad-bacon, chicken chunks, tomatoes,onions lettuce with some typ mayonaissey dressing made with mayo and ranch
Deli meat roll ups- turkey deli meat, shredded cheddar, mayo, cream cheese, mrs dash table blend seasoning , maybe some pickle or green pepper for crunch
Deli meat roll up 2- deli ham, cream cheese, pickle, mrs dash table blend seasoning...veggie crem cheese is good with these, too
I don't have any measurements yet so you'll have to figure it out to your tastes.

My favorite recipe is the latest one I tried
Broccoli & Cheese soup:
6 c. broccoli florets
1.5 c. HWC
1 8oz pkg of cream cheese
1 medium bag of shredded cheese
1/2 c water
4 bullion cubes
makes approx 8 cups - i only eat .5 cup at a time, it plenty.
Cook broccoli, mix other (minus cheese and bullion cubes) ingredients in a food processor until smooth, then blend in broccoli. Put on stove and let simmer on medium heat, add cheese. Simmer until cheese is melted.
This is the BEST LC recipe i've ever had. My mom (whos also LC) swears by it. lol! :)

It's so good I'm day dreaming about it right now. I have it on shirataki noodles all the time. It's like a staple, almost like bacon in my household lol!
meta pork chops
thin pork chops
batter: buttermilk, mustard, garlic/powder
crust: crushed pork rinds, salt, pepper
you can coat the chops with almond flour if you're allowed to eat it, but we've done with and without and either way it turns out good!
dip the pork chops in batter, then the crust mixture-like a shake and bake. fry in oil. these things are amazing!
put pam or parchment paper on a baking sheet
make small piles of shredded mozzarella, oregano, and garlic powder on the sheet
cook at 450 for 3-4 min
let set, remove with spatula
these things are amazing...like little pizzas!
2 packages of cream cheese
1/2c sour cream
1/2c heavy cream, whipped or not, turns out either way
sweetener to taste
blend above with a hand mixer
then you can make some kind of sugar free jello-just put a small amount, like an inch, of water on the stove, stir in the jello til it dissolves, and pour it into the mix
crust is SO EASY! just mix almond flour with a little sweetener, put it in the pie pan, and pour melted butter over it, and press it down. it hardens into amazing crust!
^ that's the easiest cheesecake crust i've ever heard of!!!!
I usually make mine crust-less because I'm lazy lol but that's SUPER awesome for the lazy baker ;)
My favourite sauce for steak, chicken, pork, ect. I dont measure, so its all done to taste.
squeeze of lemon.
fry up finely diced onions and garlic in oil. Add cream. Stir in mustard, salt and pepper. Cook until the cream has evaporated some of the water and is thicker. When ready, take off the heat. Stir in a goodly ammount of dill and serve on meat. Add a squeeze of lemon juice.

I just made cream cheese pancakes yesterday morning, and it's an new favorite
4 oz softened cream cheese
dash of vanilla
dash of cinnamon
separate the whites and yokes, whip whites into stiff peaks with blender. Mix the yokes and cream cheese, add splenda and a dash of vanilla. fold together whites and cream cheese/yolks. Heat non-stick griddle, use coconut oil to fry them in. Yum! A dash of lemon extract would also be delicious instead of vanilla. I cut up strawberries and added splenda to them, and ate the pancakes with butter and the strawberry sauce. The kids had real maple syrup on them. They were a big hit and i'm making them again this morning.
I love coconut shrimp with sweet chili sauce. Dip raw (peeled, tail on) into a beaten egg, and roll in a mix of crushed pork rinds and unsweetened flaked coconut. Fry in coconut oil. The dipping sauce is as follows. It makes about 300ml and lasts for ages in the fridge.
• 1/2 cup rice vinegar (or substitute white vinegar)
• 1/2 cup + 2 Tbsp. splenda (or equivalent)
• 1/4 cup water
• 3 Tbsp. fish sauce
• 2 Tbsp. sherry (or cooking sherry)
• 2 cloves garlic, minced
• 2 tsp fresh minced ginger
• 1/2 to 1 Tbsp. dried crushed chili 1/2 tsp. glucomannan powder
• Place all ingredients - except the gluc powder - in a sauce pan or pot. Bring to a rolling boil.
• Reduce heat to medium and let boil for 10 minutes, or until reduced by half. (Note that the vinegar will be quite pungent as it burns off. Generally, I find rice vinegar less strong than regular white vinegar).
• Reduce heat to low and add the cornstarch-water mixture. Stir to incorporate and continue stirring occasionally until the sauce thickens (about 2 minutes).
• Remove from heat and taste-test. You should taste "sweet" first, followed by sour, then spicy and salty notes.
I just bought some coconut yesterday. I'm going to try that shrimp soon!
Love Applebee's Tequila lime chicken. Allrecipes has a very long recipe that I have used for years but have shortened it without any loss of flavor. You can get the original from allrecipes if you want but here is mine.
Tequila lime chicken
1 cup water
1/3 cup soy sauce + 2 tsp splenda
4 tablespoons lime juice
2 teaspoons minced garlic
1 teaspoon liquid smoke flavoring
1/2 teaspoon salt
1/4 teaspoon ground ginger
2 tablespoons tequila
6-8 skinless, boneless chicken breast halves
Cut breasts in 1/2. Place in nonreactive container and marinate at least 3 hours but not more than 6 hours. Broil or grill till done, top with Mexiranch sauce & cheese and broil until melted. Serve.
1 Cup ranch dressing
1/4 cup salsa
1 minced tomato
1 minced jalapenos
a pinch of cumin & cayenne
2 cups shredded cheddar
Mix all stuff except cheese. Top chicken breasts with sauce and then cheese and then proceed as above.
My fav crackers:
1 cup almond flour
1 packet of Splenda
1 egg white
pinch of salt, garlic powder, & onion powder
Preheat oven 325. Mix ingredients well. Place mixture onto a well greased piece of tin foil. Spray a piece of wax paper with cooking spray and lay over top of mixture. Use a rolling pin to roll out to a cracker thickness. Gently remove wax paper. Sprinkle more salt on top if desired and press lightly into dough. Score with knife or pizza cutter into squares. Lay tin foil on rack in oven. Bake until golden brown about 10 minutes. Makes around 50 crackers. Carb count is about 13 for the whole batch. You can also vary the flavor-use ranch powder, ground bacon bits, season salt...
My fav fast bread:
Almond Cheese Rounds-Low Carb Recipe
1 cup grated cheese
1 cup almond flour
2 tablespoons butter
1 teaspoon garlic
1/4 teaspoon salt
Preheat oven to 350°
Mix up all ingredients.
Press into 6 muffin top pans to make the round shape.
Bake for about 10-12 minutes until golden brown.
Really good coated with butter & garlic and put under the broiler for a few minutes.
2 diet soda recipes:
Cola Barbecue Chicken
4 boneless, skinless chicken breasts
1 cup catsup (There is a recipe for lowcarb catsup on the newbie site under must have recipes if you would like to try that)
12 oz. can diet cola (best if you use diet rite!)
Put chicken in nonstick skillet. I usually brown my chicken a little first before pouring the catsup and diet cola over the top. . Bring to boil. Cover, reduce heat and cook for 45 minutes. Uncover, turn up the heat and continue cooking until the sauce becomes thick and adheres to the chicken. It turns into the most incredible BBQ sauce.
Orange chicken in the crockpot.
1 whole chicken
1 can diet Rite tangerine
1 tsp. orange zest
spices to your tasting ( I use Spike and garlic)
I put all together in crock pot and cook till done.
Alabama white bbq sauce:
1 1/2 cup mayo
1/4 cup prepared horseradish
1 tbl lemon juice
1 tbl Worcestershire sauce
1 tsp fresh parsley
1/4 tsp hot sauce or red pepper
1 clove garlic (crushed)
Mix all ingredients & chill for 3 hrs.
This makes a lot and keeps well in the frig.
Tastes just like a Whopper!
1/2 lb hamburger
1/2 tsp liquid smoke
2 cups shredded lettuce
2 slices american cheese
10 dill pickle slices, chopped
1/4 cup chopped onion
1/4 cup chopped tomato
4 tbs mayonnaise
2 tbs low carb catsup
1 tbs cream
How To Prepare: Place lettuce, tomato, onion and pickle in a bowl and stir.
In a small bowl, mix together mayonnaise, catsup, and cream. Set aside.
Brown hamburger and liquid smoke over medium heat until cooked through. Drain, then stir in cheese until melted.Pour meat immediately onto salad and mix through while still hot. Pour mayonnaise mixture over salad and stir. Enjoy!
Number of Servings: 1 -2
Carbs per serving - include all nutritional information if known: 3 grams
Preparation Time: 15 minutes
I love this pie and my boys(14 & 18) eat it without even knowing there is tofu in it. :)
Chocolate Fudge Pie
(Ridiculously easy, and insanely delicious)
12.3 oz silken or firm tofu (I highly recommend Mori-Nu silken-firm or lite for no aftertaste.)
1 tsp cocoa powder
1 tsp pure vanilla extract
2 tablespoons milk of choice
scant 1/8 tsp salt
8 to 10 oz chocolate chips (a little over 1 and 1/3c or more)
2-3 tablespoons agave or other sweetener optional: extracts, flavorings, or liqueurs
Melt the chocolate (either on the stove or in the microwave), then throw everything into a food processor and blend until super-smooth. Pour into a pie crust if desired. Put in frig until chilled. This gets firmer and firmer, the longer it sits. (It’s firmer if you use firm tofu and more like mousse pie if you use silken.)
I've always made the meatloaf--never did the rotisserie style. I use a pound of beef and lamb to save $$$$$. Lamb is $$$$.
Gyro Meat and Tzatziki sauce
1 medium onion, finely chopped or shredded
2 pounds ground lamb
1 tablespoon finely minced garlic
1 tablespoon dried marjoram
1 tablespoon dried ground rosemary
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
Tzatziki Sauce, recipe follows
Process the onion in a food processor for 10 to 15 seconds and turn out into the center of a tea towel. Gather up the ends of the towel and squeeze until almost all of the juice is removed. Discard juice.Return the onion to the food processor and add the lamb, garlic, marjoram, rosemary, salt, and pepper and process until it is a fine paste, approximately 1 minute. Stop the processor as needed to scrape down sides of bowl.
To cook in the oven as a meatloaf, proceed as follows:
Preheat the oven to 325 degrees F. Place the mixture into a loaf pan, making sure to press into the sides of the pan. Place the loaf pan into a water bath and bake for 60 to 75 minutes or until the mixture reaches 165 to 170 degrees F. Remove from the oven and drain off any fat. Place the loaf pan on a cooling rack and place a brick wrapped in aluminum foil directly on the surface of the meat and allow to sit for 15 to 20 minutes, until the internal temperature reaches 175 degrees F. Slice and serve on pita bread with tzatziki sauce, chopped onion, tomatoes and feta cheese.
To cook on a rotisserie, proceed as follows:
Form the meat mixture into a loaf shape and place on top of 2 overlapping pieces of plastic wrap that are at least 18 inches long. Roll the mixture in the plastic wrap tightly, making sure to remove any air pockets. Once the meat is completely rolled in the wrap, twist the ends of the plastic wrap until the surface of the wrap is tight. Store in the refrigerator for at least 2 hours or up to overnight, to allow the mixture to firm up.
Preheat the grill to high. Place the meat onto the rotisserie skewer. Place a double-thick piece of aluminum foil folded into a tray directly under the meat to catch any drippings. Cook on high for 15 minutes. Decrease the heat to medium and continue to cook for another 20 to 30 minutes or until the internal temperature of the meat reaches 165 degrees F. Turn off the heat and allow to continue to spin for another 10 to 15 minutes or until the internal temperature reaches 175 degrees. Slice and serve on pita bread with tzatziki sauce, chopped onion, tomatoes, and feta cheese.
16 ounces plain yogurt (I use Greek yogurt and skip the draining part)
1 medium cucumber, peeled, seeded, and finely chopped
Pinch kosher salt
4 cloves garlic, finely minced
1 tablespoon olive oil
2 teaspoons red wine vinegar
5 to 6 mint leaves, finely minced
Place the yogurt in a tea towel, gather up the edges, suspend over a bowl, and drain for 2 hours in the refrigerator. Place the chopped cucumber in a tea towel and squeeze to remove the liquid; discard liquid. In a medium mixing bowl, combine the drained yogurt, cucumber, salt, garlic, olive oil, vinegar, and mint. Serve as a sauce for gyros. Store in the refrigerator in an airtight container for up to a week.
Yield: 1 1/2 cups

This is my favorite at the moment. Sweet, crunchy, nutty granola.
2 Cups HWC
1 stick butter
1 Cup parmesan cheese (in the green box)
3 cloves poached garic (I poach whole cloves in olive oil in my sous vide machine but you can do it on the stove. Just take about 1 cup of cloves, cover with olive oil and set over low heat until cloves are soft but still firm. Put in jar with top and keep in fridge)
1/2 block cream cheese (4 oz.)
Heat the cream on medium until it starts to bubble. Add butter and cream cheese and stir until melted. Whisk parm cheese in until melted.
I serve over Dreamfields and crumble 2 or 3 slices of crisp bacon over the top.
Takes about 15 minutes total!
What is HWC? I'm new here and don't know all the meanings of the "alphabet

I thought I copied this recipe from the main thread, and started my own thread just to thank whoever it was, who I could not remember, who shared this idea.
Made it tonight, and it was---wow, so darn delicious, and so darn easy. Put it over pork chops, but I can see how it would be great over steak and chicken too. I'd like to have about a hundred low carb recipes as easy and delicious as this! So, thanks for sharing it!
