Hi All,

So I'm trying to gear up to get back on the LC WOE. I've done it three times already, losing 30-50lbs each time before messing up (berries got me the first two times!). I was doing really well this last time and probably would have made it all the way to goal except I got pregnant haha! That was an unexpected side effect of losing 40lbs and sticking to it for 6 months!

For some reason, this time, I can't seem to think of anything to eat. :confused:

So I'm here for inspiration. What is the one recipe, food, store bought item, whatever...what is the one thing that you couldn't do Atkins without?

If you post a picture please don't be a tease and post the recipe too ;)

Here's some reading for you.

My sister is trying to get the fruit and berries down and it's hard. Now I turned her onto chayote squash for cooked apples and jicama and syrup for cold apples. YUM~!!!!

I could not stick to Atkins without cheesecake. I like the other Almond Flour Fudge Cake and the Almond Flour Carrot Cake but I can live without them. I can't live without cheesecake. LOL

Best Ever Sour Cream Cheesecake

2 cups almond flour
1/4-cup Splenda
1/4 cup (half a stick) butter-melted

1-cup sour cream
4 packages (8 oz each) cream cheese, softened to room temperature
1/2 cup Erythritol
1 cup Splenda
3 tablespoons flour (I sub 1-1/2 tablespoons vital wheat gluten)
3 tablespoons lemon juice (I use 1 whole Meyer lemon)
1 tablespoon vanilla
4 large eggs
4 large egg yolks

Preheat oven to 325

Make crust: In medium bowl, with hands or back of spoon, mix almond flour with Splenda and melted butter until they are well combined. Cut a round piece of parchment for the bottom and collars for the sides of a 9 x 4-inch cake pan. Spray with cooking spray, stick pieces into place and spray again. Press almond flour evenly into the bottom of the pan and bake at 325 for 20 to 30 minutes or until lightly browned.
Remove from the oven and cool slightly then place into the freezer to finish cooling while you make the filling.

Make the filling: Place the sour cream in the bowl and mix to lube the bowl. With the mixer running add the cream cheese a piece at a time until all the cheese is in the mixer. Add the sweeteners and mix until smooth. Add the flour, lemon juice and vanilla and mix well. Beat the eggs in a separate bowl and gently mix the eggs into the batter making sure they are completely mixed in. Pour the batter over the cooled crust and bake at 325 for 1-1/2 hours.

Remove from the oven cool on the counter then refrigerate overnight before serving. To serve carefully remove the parchment collar and then place a clean piece of parchment over the top of the cheesecake and turn the cake out onto your hand and then place a serving dish on the bottom and flip.

Chicken Lady can you taste the eggs in your cheesecake? My husband can't stand more than one egg in cheesecake when I make it or he is like YUCK I taste eggs

Hard boiled eggs on hand at all times to eat by themselves, deviled, egg salad, chix salad, tuna salad, add to veggie salad, etc.

I could not do low carb if I couldn't have ground beef and cheese. I can't give them up. I would still low carb if I didn't have Linda Sue's recipe site (the ground beef section of course) and Chicken Lady's above mentioned Almond Fudge Cake, but they make low carb so much easier.

I could not do low carb without eggs. Scrambled, over easy, soft boiled, hard boiled, omelet, frittata, quiche, egg salad - all good ways to eat eggs.

Cucumbers, celery, peppers and mushrooms - I have these raw as my 2-3 cups of salad veg because I get so sick of lettuce

Yes I think I can, but then I love the taste of eggs and to me the more eggs a cheesecake has in it the better it tastes. I don't like no bake cheesecake because there are no eggs in it and I think the eggs are what make it taste good.

Bacon, eggs, and cheese.

My best friend who has celiac and is the one person I can really talk to about what I eat without being judged. He jokes about my love of eggs and everything pork. He recently also went low carb - and loves it.

My partner - who's incredibly high metabolism allows him to eat anything without gaining - makes it nice when I feel like baking brownies or cookies, he can eat them and I get the pleasure of making them. His dad is also really tall and slender, so I don't think its going to slow down any time soon.

For me the hardest things of eating low carb are snacks, desserts, pizza and pasta, pretty much every food group but veggies lol

For snacks I like crunchy green beans, nuts, homemade jerky, cheese, pepperoni and olives, meat and cheese roll ups and stuffed celery.

For desserts I like cheesecake, carrot, chocolate and yellow cake, cookies, strawberries and cream, ice cream, all low carb of course.

For pizza I like using the healthified pizza crust, and my low carb pizza crust.

For pasta, I go without but when I make a stew or soup I use Peggy's dumpling recipe and I like the cheesesteak manicotti recipe using steak-ums or Linda Sue's spinach lasagna.

I also use the healthified sub rolls for sandwiches and sloppy joes.

Crunchy Green Beans

I use frozen whole green beans to make these.

Place frozen green beans on a plate, drizzle your favorite oil over the top and salt if you like. Heat in microwave until dark and crunchy. It takes 19 minutes in my microwave, I usually mix them up about 3/4 of the way though.

yeah that cheesesteak manicotti is one of my new favorites.

a standard soup of mine of the Southwestern Taco soup. I do it with either chicken or beef.

another of mine is just ribs and sourkraut.

Homemade beef jerky. It's such a great snack. I love the stuff, especially since I bought a jerky cannon and now make it out of ground meat.

While there are many low carb recipies that are delicious, I would have to say that I could not stay on this WOE without cauliflower. Yes, I said cauliflower. I would say that when I started, I ate some roasted cauliflower every night for at least 6 months. Perhaps I would occasionally branch out and have it mashed, but roasted was my favorite. Then I discovered mashed with cream and smoked cheese, but that came later. I continue to be amazed by the versatility of this somewhat overlooked vegetable, and am just waiting for someone to make a variety of pasta out of it! I did, for a dinner party, make cauli-rice to go with a Moroccan Lamb stew, and people thought it was cous-cous, so pasta is a possibility (pastability?).

Wonderful cauliflower take on potato salad in Dana Carpenters Lo Carb barbeque book. There are several but this is her favorite and mine too. I'll post the recipe if you are interested.

I guess my favorite would have to be eggs though. Even when I am not lo carbing I still have eggs for brekkies.

I love Belgioioso Mozzarella, especially the pre-sliced logs for convenience. Especially good on fried eggs or with salami and thin sliced apple or pear. (Yes, I know to avoid fruit. I've cut back, still working on it though.)

Eggs are a must. Ezekiel bread and Dreamfield's pasta - I'm aware of the debate - are awful nice to have when I'm having trouble continuing this way of eating.

Almond flour for any number of treats. I made a pan of Magic Bars with it a few days ago. So good.

Half & Half and cream are essential for me, too. I've tried other "milks" but they just don't cut it at all.

Meat, of course. Ha ha.

Hard boiled eggs for me too. They're a fast, easy snack, especially when I buy them from work by the case, already have the shell off too!!

I also just love BIG fat salads with lots of cool toppings and real salad dressing.
Broiled or grilled salmon or any fish actually
Rotisserie chicken.
(this is for after induction, but I love berries with yogurt)

I also couldnt get by without coffee for afternoons when I'm droopy and sorta hungry, but dont want to snack mindlessly.
