Low carb coconut ice

I have been looking everywhere for a low carb coconut ice recipe made with splenda or other artificial sweetener. Does anyone know of one?

I'm not sure what a coconut ice is, but netrition carries torani and davinci syrups, both (I believe) have a coconut syrup.

Are you asking about ice - as in shaved ice? That would be pretty easy using a SF syrup as Dottie suggested.

OR

Are you asking about ice as in coconut sweets?
I used to love those as a kid. I've been planning to make a low carb version forever but just have not gotten around to it.

These are popular in English/Caribbean and I think some Asian cultures in different variations.

In Jamaica they are called Coconut cakes or Grater Cakes but pretty similar to the English version Coconut Ice. The Jamaican version does not use condensed milk though.


If that is what you are looking for then I think Tagatose would be ideal for this. If you are making the English version with condensed milk, again, you can make condensed milk with table cream and tagatose. If you are making a Caribbean version then again, I think Tagatose is ideal here.
Some folks report stomach distress when using Tagatose, so hopefully if this is what you are looking for, you can use this product. I find it to be a great addition to my LC arsenal.

Before I found Tagatose, my original plan was to use LC Food Corp's Confectioner's Sugar to do this. Never got around to doing it so I don't know if it would work.

Thanks for your replies

Coconut ice is a confectionary made of coconut and sugar as the main ingredient.

Perhaps I am better off asking if artificial icing sugar is available?

I would appreciate your thoughts on how I might go about making this recipe with artificial sweetener :-)

Tagatose looks great tulipsandroses. I have never heard of it. It looks just the ticket.

Sounds similar to Jamaican grater cakes. I think the Tagatose would work. I would just use a high carb recipe and sub the sugar with the Tagatose. Try making a small batch first in case you don't tolerate the tagatose well.
