Chia Chocolate Fix
Recent reader, first time poster!
I'd been seeing a few recipes for chia pudding online in the past several weeks, and I got hit with a pretty major chocolate craving right before my period, so I figured I'd try some out. Most of the recipes call for almond (or soy) milk, but since I'm not eating cereal for breakfast anymore, I don't keep any on hand.
After some experimentation with existing recipes, I settled on this one (the results remind me of chocolate mousse filling). It works out to about 7-8 carbs:
- 2 tbsp chia seeds
- 1 tbsp unsweetened cocoa powder
- 1/2 tsp vanilla extract
- 3/4 cup heavy cream
- 1 packet of your preferred sweetener (I used stevia)
I let this chill in the fridge for about 10-15 minutes until it firmed up. You may have to tweak this a bit, depending on the temperature inside your fridge.
